AGAVE MEZCAL

DON AMADO MEXICO, OAXACA Eleven generations of continual mezcal distillation with a legendary commitment to craftsmanship and experimentation have culminated in a spirit that is simultaneously complex and approachable. Don Amado is made from earthen-roasted maguey hearts which are, after crushing, fermented together with their piña fibers for a rich maguey character. The mash is then double distilled in small traditional ceramic clay pots. Don Amado Mezcal Rústico 94PF / 375ML / 750ML The flagship expression of the Real de Minas Distillery, Don Amado Rústico is made using the historic method of slowly roasting fully mature Espadín maguey hearts on firewood embers before natural fermentation with airborne yeast and a slow double-distillation in ceramic pot stills. The minero clay-pot still is quite prevalent on the nose with aromatics leaning towards ash, crushed walnuts, roasted corn, and savory spices. A bright, citrus Espadín agave palate is well balanced against notes of A regal take on what many consider to be an essentially rustic distillate, Don Amado Añejo shows amazing complexity beyond simple smoke, and is a great example how barrel flavors can complement rather than mask agave’s wild charms. *Aged varieties are matured in American oak casks previously used for barreling Pedro Domecq brandy. Don Amado Mezcal Reposado* 90PF / 750ML An homage to the popular history of Oaxacan clay-pot mezcal aged in brandy barrels, Don Amado Reposado brandy barrels to create a nostalgic flavor of earthen-smoked maguey with the soft caramel and butterscotch notes of American white oak. *Aged varieties are matured in American oak casks previously used for barreling Pedro Domecq brandy. Don Amado Mezcal Arroqueño 92PF / 750ML Rustic and refined, Don Amado Arroqueño is made from an enormous maguey species that requires 18 years to mature but is cultivatable, so ecologically sustainable while simultaneously wildly exotic and delicious. From ‘karwinskii’ maguey (10-14 years to mature). Soft smoke with candied notes and a creamy mouthfeel layer fruit and a subtle spice on a palette of rich, cooked maguey reminiscent of the high desert just after a heavy rainfall, bright and clean. This mezcal is on the fruitier side with somewhat candied flavor notes, a creamy

mouthfeel, and just a hint of spice. Don Amado Mezcal Tepeztate 92PF / 750ML

On the nose, there is candied lime, soft white flowers, with more vegetal notes of bell pepper and cucumber skin along with hints of nuts, soft pastry, and a very lightly-charred wood, supported by a back note of minerality.The flavors continue in the same vein, tasting of grilled lemon & lime, sun-baked white flowers, bell peppers, persimmon, squash blossoms, charred oak, and minerals. These flavors are intricately balanced and deliciously perplexing, hinting at matcha tea and persist in a delicate fade that savors grilled fruit nuances. Don Amado Mezcal Tobala & Bicuishe 92PF / 375ML / 750ML A lesser seen combination of agave varieties is brought together in this Don Amado expression. The result is delicious and one to savour neat. Rich aromas of roast agave, salt citrus, with notes of lactic fermentation. To tase, it combines the woody Bicuishe with the sweet minerality of the Tobala. The tension of the two make for a delicious juxtaposition. Don Amado Mezcal Tripon, Barril & Bicuishe 92PF / 375ML / 750ML Made 100% from Tripón, Barríl, and Bicuishe maguey grown at 4,800’ in the town of San Pablo Apostol, Oaxaca. There are alluring aromas of pastry being prepared: wild honey, green apple peel, tart cider, fragrant pear, and white grapes. The palate offers pure, bright sweetness, green herbs, and overripe nectarine, with a medium-length, smooth finish. Don Amado Mezcal Pechuga 92PF / 375ML / 750ML An autumn ‘harvest bounty’ mezcal, Don Amado Pechuga is a third distillation of our Don Amado Rústico, made with the addition of seasonal fruits, nuts and spices including apricots, wild criollo apples, hard, stubby bananas with clove, cinnamon, raisins, almonds, and walnuts. A treasure of complexity that exhibits rich, bright fruit notes, roasted nuts, dark baking spice, wafting hints of clean smoke, fresh cinnamon, and stone fruits.

Don Mateo de la Sierra Mezcal Manso de Sahuayo 96PF / 750ML This artisanal mezcal is characterized by its borderlands terroir: part mezcal country, part tequila country, part freshwater lake, all Mexico. The agave is sourced from small farmers in the town of Sahuayo, near Michoacán’s border with Jalisco. Agave Americana var. Manso de Sahuayo (formerly known as Cenizo) | Stone Pit Oven Roasting | Fermentation in Wooden Tank | Pine and Oyamel Filipino Style Alambique | Heads and Tails for Alcohol Adjustments | Natural Spring Water for Alcohol Adjustments. Don Mateo de la Sierra Mezcal Pechuga 90PF / 750ML Pechuga expressions are typically made for special intimate gatherings such as weddings, baptisms, and other major life events and are shared within their community. Since Pechugas are traditionally made for these occasions, there are only limited quantities made and each batch is unique. Just before second distillation, the matriarch of the Vieyra family, Delia Vargas Vieyra, prepares her family recipe of ingredients, adding special characteristics to the body, aroma, and flavor of the mezcal. This recipe was a creation of her own, pulling from the experiences of growing up in a house of mezcaleros. Iguana, venison, and turkey (along with dried fruits and nuts) are hung inside the still, the vapors then produced interact and absorb the contents of the bag bringing the unique profile of aromatic roasted notes like guajillo chili, ancho chile and roasted pineapple. It expresses the mineral notes reminiscent of spring water with an elegant note to moist earth and tropical fruits such as melon and mango. The taste confirms the notes of dried chiles and roasted ripe pineapple. A mezcal of good intensity of flavor and medium persistence, warm with alcohol. Agave Cupreata | Meat, fruit, and spice blend in distillation | Wood Fermentation | Ambient yeast | 5-cut distillation | Filipino style wood stills made from Oyamel and Pine | Natural spring water for alcohol and flavor adjustments. Don Mateo de la Sierra Mezcal Silvestre 100PF/ 750ML Don Mateo Silvestre is a unique expression based solely on the agave. This mezcal is produced using only wild agave Cupreata plants on the mountainsides of El Limon, where they thrive with the help of cows and chickens, herbicide, and pesticide free. Wild Cupreata Agave | Stone pit oven roasting | Oak wood fermentation | Pine and Oyamel Filipino Style Alambique | Heads and Tails for Alcohol Adjustments | Natural Spring Water for Alcohol Adjustments | 1 year rested in glass.

DON MATEO DE LA SIERRA MEXICO, MICHOACÁN In 1840, the Vieyra family began their journey as maestro mezcaleros. For six generations, they have been known for distilling Mezcal in Michoacán. The brand is not named after the first maestro, but the third, Emilio’s great-great-grandfather Mateo Rangel. The Vieyra family chose Don Mateo because he fought and died for social causes during the Mexican Revolution. In remembrance of him, the Vieyra family continues to fight for these causes and change the industry the only way they can, through their actions. The Vieyra family uses sustainable field practices, like using cows and chickens as herbicides and pesticides and leaving the land as untouched as possible. Trees from their property are never cut or moved and the agaves are spaciously planted to avoid soil erosion in efforts to maintain a natural balance to the fields. The terroir of Michoacan is characterized by its rivers, the Trans Mexican Volcanic Belt with many active, dormant, and extinct volcanoes, and the variety of forests from conifer to tropical. The Vieyra Vinata is nestled on the side of a hill in the steep highlands above Morelia in the Rio Balsas region surrounded by temperate evergreen forest. The agave fields sit at an average of 7,500 ft, and the Vinata where the spirit is roasted, macerated, fermented, and distilled sits at 7,050 ft. Don Mateo de la Sierra Mezcal Alto 92PF / 750ML The name of this semi-wild agave is Inaequidens, but locally it is known as Alto because it only grows at very high elevations. The plant can take about 12-15 years to mature. This mezcal is defined by fresh earth and citrus flavors. A terroir-driven mezcal from high up in Michoacán. Don Mateo de la Sierra Mezcal Cupreata 92PF / 750ML Don Mateo Cupreata is made with semi-wild agave Cupreata. Agave Cupreata was nearly gone from Michoacán until the Vieyra family revived the subspecies in their own backyard. It can only reproduce sexually and is a pillar of agave biodiversity. Once mature, the agave Cupreata are roasted in a pit oven, fermented using naturally occurring yeasts in oak wood tanks, and double distilled in a Filipino style still. The distillation in local pine wood rounds off the smokiness from the earthen pit; a mezcal to be appreciated by aficionados and newcomers alike. EL BUHO MEXICO, OAXACA The ElBuho Mezcal brand, founded in 2010 by Brooklyn-based chef TJ Steele, has been exclusively produced by the Jimenez Mendez family, 5th-generation mezcaleros, in Santiago Matatlan, Oaxaca, Mexico. Established in 1880—the art of producing mezcal was passed down to Octavio from his father, Don Isaac, whose name adorns the family label. They started with only three small copper pot stills in their home to produce mezcal but now have four discrete, artisanal mezcal distileries.The recipes, attention to detail, and tradition have not changed.

El Buho Mezcal Especial Arroqueño 106PF / 750ML

The Arroqueno agave takes about 15 to 20 years to mature. One of the singularities of these plants is their size, with harvested pinas weighing up to 300kgs. This makes them one of the largest plants mezcal is made from. With a smooth start of bold roasted agave flavor, this velvety mezcal has an incredible texture of light fruit notes and a long-lasting finish. At 106-proof, this mezcal

expression’s heat is elegant and balanced. El Buho Mezcal Especial Cuishe 93PF / 750ML

El Buho Mezcal Espadin 86PF / 375ML 90PF / 750ML / 1.0L

Unlike most mezcals, the Cuishe varietal is unique because the plant is cooked with the trunk of the plant. This drives a vibrant expression full of mineral, grassy, and dark chocolate flavors with a spicy finish. El Buho Mezcal Especial Ensamble 100PF / 750ML This Ensamble is crafted from four agave plants: the Arroqueño, the Coyote, the Barril, and the Cuishe. The banana nose is balanced out by a dry, fatty mouth feel with intense flavors of pineapple, roasted agave, and vanilla. The finish is a dark caramel with sprinkles of pepper and salt. El Buho Mezcal Especial Espadin Puro Capon 94PF / 750ML This special batch of mezcal is made exclusively from Espadín agave planted 10 years ago by the Jimenez Mendez family in their field (hornos), in Santiago Matatlán, Oaxaca. After nine years the agave sprouted quiotes, which were cut, and left in the field for one year before harvesting. The resulting mezcal is a coveted, family treasure called “PURO CAPÓN.” El Buho Mezcal Especial Jabali 100PF / 750ML The Jabali agave is notorious for being the most difficult agave to work with due to the foam it produces and a lower sugar content; it requires three to four distillations. This agave is named after the wild boar because its spiky, curved leaf resembles the animal. A velvety and bright expression, the Jabali

The flagship mezcal artesanal of El Buho’s line, the Espadin has a light roast and smoke to its nose. Medium body with pronounced notes of caramel, red apple and coffee, this Espadin is perfect for cocktails or enjoyed on its own. Spanish for the ‘sword,’ the Espadin agave has long been cultivated due to its vitality, high sugar content and short lifecycle. These agaves mature around 7 to 10 years in age, which is one of the shortest maturation cycles of the 30 to 40 varietals commonly used to make mezcal. El Buho Espadin Distilled with Mango 94PF / 750ML Our Mango Mezcal is made by adding in ripe mangos to the third distillation of Espadin, much like the style of Pechuga mezcal only without a protein. The sugars from the mango do not transform into alcohol but do enrich the taste and aroma with some caramelization during the 3rd distillation. El Buho Mezcal Agave Mexicano 94PF / 750ML We find this first release of Mexicano, from Agave Rhodacantha, to be a delicate, balanced mezcal that is best sipped. Although this agave carries many names throughout Oaxaca, the mezcales made from this species have a signature flavor across regions that often have beautiful vanilla, floral and chocolate

notes with a thick texture. El Buho Mezcal Anejo 94PF / 750ML

has strong baking spice on the nose with light citric notes. White pepper, cinnamon, and lime all interplay to create a tannic and chocolaty spirit. El Buho Mezcal Especial Tepeztate 96PF / 750ML This Tepeztate mezcal comes from multiple batches of the rare agave, which grows wild off the mountainsides. The plant ages 25-30 years before harvesting and requires a third distillation due to its low sugar content. Bold and complex, with Tepeztate’s heavier body relays its intense flavors. El Buho Mezcal Especial Tobala-Espadin 94PF / 750ML The Tobala-Espadin ensamble is a favorite of the Jimenez Mendez family and the recipe has been passed down for generations. The small size and wide leaves of the Potatorum agave make it one of the easiest species to identify. The round and roasted agave sweetness of the Espadin melds perfectly with the tropical fruit and mild salt of the Tobala in this lively ensamble. Car amelized pineapple, cooked agave, sea salt and buttered popcorn are standout tasting notes that end with a smooth finish.

We are excited to share our certified six-year Extra Extra Añejo mezcal with you. We find this to be unique, delicious, and balanced. Vibrant tasting notes include butterscotch, agave, roasted pineapple, vanilla, and oak with many nuances underneath. El Buho Mezcal Tepeztate 96PF / 750ML Bold and complex, the tepeztate’s heavier body relays its intense flavors. High smoke and minerality coat the palate and open to kippery undertones. Slate and oil close out this rare and expressive mezcal. El Buho Mezcal Agave Jabali 102PF / 750ML The jabali agave is notorious for being the most difficult agave to work with due to the foam it produces and the lower sugar

FOSFORO MEXICO, OAXACA After 15 years and 200 tastings, Jim Cramer and Lisa Detwiler found the “one.” Fósforo Mezcal is the result of their 2018 meeting with master mezcaleros Aarón Alva Sánchez and Mariana Hernández. Combining a passion for discovery with generational expertise, this collaboration brings an exceptional, field-to-bottle mezcal from the heart of Mexico to your glass. Fósforo Tobalá is produced by mezcalero Aarón Alva Sánchez San Nicolás Huajuapan, Puebla using cultivated Maguey Tobalá which grows for 8-15 years. The harvested plants are cooked underground for 5-8 days, shredded, and then naturally fermented for 10 14 days in open-air wooden vats. The pulp and liquid Fosforo Mezcal Tobala 90PF / 100ML / 750ML A Mexican classic for a new generation of drinkers, Tobala is organic and handcrafted in small batches with an artisanal approach that respects the land and the spirit. Incredibly smooth with light smoke rising from fruit and white pepper in the aromas and flavors. Stir it into a little sparkling water with a dash of orange bitters for a complex and refreshing afternoon spritz. LA ESCONDIDA MEXICO, OAXACA Mezcal production in Mexico was banned by the Spanish crown for almost 100 years in the early 18th century. However, local producers resisted and continued to produce Mezcal in the beautiful mountains of Oaxaca. Among them were some brave women who risked their lives selling their Mezcal illegally. The brand La Escondida, meaning “the hidden lady”, was inspired by local legend and honors those women. Grand Mezcal uses 100% agave espadin (Agave Angustifolia Haw by its scientific name), one of the most prized agave varieties grown in the heartland are then double distilled in copper pots. MINA REAL MEXICO, OAXACA An ecologically sustainable mezcal made with agave slowly cooked in a brick kiln without the consumption of firewood. MEZONTE MEXICO, JALISCO Mezonte is a non-governmental organization (NGO) that promotes, supports, and preserves the production and practices of traditional agave spirits. Pedro Jimenez, Curator of all thing’s agave, and the mind behind Mezonte, works in collaboration with producers across Mexico to ensure the producers receive fair wages and recognition for their products. Highlighted here are some of the mezcaleros that are part of this project. Mezonte “Candido Romero,” Jalisco 90PF / 200ML Loma de Guadalup, where Candido “Cande” Romero lives is known for the growing the Ixtero Amarillo maguey, representative of southern Jalisco. Cande is very careful in his way of working and with agaves “capones” that can reach up to 16 years. Always positive, Cande shares his lightheartedness through his mezcals. Mezonte “Japo,” Jalisco 92PF / 200ML Mezonte Japo is produced by Hildegardo Joya “Japo” in Cabo Corrientes. His mezcales (also called raicilla) are elaborated with endemic agaves that grow 12 – 25 years. Tropical in every way. Intense taste of long roasted agave, notes of papaya, mango, and a caress of ocean mist. Mezonte “Jorge Perez,” Michoacan 102PF / 200ML One of the most daring mezcal producers in México. Like an alchemist, Jorge experiments, all in the name of finding an interesting mezcal. Enthusiastic and humble, Jorge represents the spirit of a Michoacán producer. Agave Inaequidens from Rio de Parras, Querendaro, brick fermentation with pulque, distilled in pine with copper and oyamel. Mezonte “Lorenzo 11 Magueys,” Jalisco 90PF / 750ML Lorenzo and Tomás Virgen Baking: earth and stone conical oven Cooking: 3 to 4 days. Bagasse capped Firewood: huamuchil and mesquite. Mezonte “Lorenzo,” Jalisco 94PF / 200ML 92PF / 750ML Don Lorenzo–Lorenzo Virgen—is part of at least 3 generations of mezcal legacy. On his lands, he has more than 10 varieties of Agave. On the horizon, you can see Colima’s Volcano, under which he teaches his grandchildren to make mezcal. This agave spirit is distilled by Don Lorenzo using all 10 agave varietals. Produced in Chancuellar, in an underground pit oven, fermented with spring water and distilled with pine wood with copper and Parota wood. Mezonte “Santos Juarez,” Jalisco 94PF / 200ML / 750ML Santos Juarez and his family live and work in Toliman, Jalisco, possibly the birthplace of Mexican distillation. Santos’ mezcales are born and processed within the volcanic soil and fermented in stone the same way they did over 500 years ago. Santos is produced using Alineño and Cimarron agave (A. angustifolia haw and A. rhodacantha), extracted by hand using hatchets, fermented with spring water, and distilled in copper and parota wood. Mineral notes from fermentation in stone and a bright grapefruit peel profile. Subtle notes of pepper. Mezonte “Teodoro,” Oaxaca 96PF / 750ML Miahuatlán is possibly one of the most important traditional regions of mezcal production in Oaxaca. Teodoro Garcia, originally from this Miahuatlán and a long legacy of mezcaleros, has his own palenque to make mezcal. He is perhaps one of the few Oaxacan producers that still respect the original flavors of the plant. Made from Bicuixe & Espadín agave, extracted with tahona and distilled in a Copper Alambique. PALOMO MEXICO, SANTIAGO MATATLAN, NOM-O20X Del Buen Agave is a collective of producers in the “Mezcal Capital of the World,” Santiago Matatlán, Oaxaca. They have worked together since 1930 and became an official Cooperative Society in 2006. Mezcal Palomo was launched by them in 2013.
