CAPERITIF SOUTH AFRICA Caperitif, a forgotten aperitif from Swartland, South Africa, north of Capetown. Caperitif just resurfaced almost 100 years after having gone missing. The makers call it a “ghost ingredient,” a spirit that kept showing in cocktail recipes from the early 20th century, particularly in vintage copies of Harry Craddock’s 1930 classic “The Savoy Cocktail Book.” A Danish mixologist queried winemaker Adi Badenhorst, and the modern version of Caperitif was launched in 2015. Caperitif Grande Quinquina 37PF / 750ML Caperitif is a fortified and aromatized wine like vermouth, made bitter with cinchona bark, a major ingredient in tonic water. Caperitif is handcrafted by infusing Chenin Blanc with the flavours and aromas of some 35 natural botanicals, many of which are unique to the insane biodiversity of the Cape Floral Kingdom. CHAZALETTES ITALY, TURIN The heir of the dynasty, Giovanni Chazalettes, armed with the old recipes book and his youth memories, begins a new chapter in their history. Characterized by the shared aim to save important heritage of Turin. It’s dedicated to the Queen Margherita of Savoy, who in 1907 granted Chazalettes to bear the Real House emblem. Chazalettes Vermouth di Torino Bianco 33PF / 750ML The Queen’s White Vermouth is a Vermouth of Turin with an intense fragrance of flowers and fruit in which, in addition to Piedmontese artemisia, there are notes of sweet citrus, coriander, angelica and a perfumed cardamom. Chazalettes Extra Dry Vermouth di Torino 36PF / 750ML Citrus peels freshness is beautifully balanced by Piedmont alpine herbs roundness with recalls of juniper and other spices. Chazalettes Vermouth Rosso della Regina 33PF / 750ML The Queen’s Red Vermouth has notes of marjoram, Piedmontese herbs, musk mallow and coriander.

Merlot-based vermouth with cherries, hibiscus, ginger, tellicherry peppercorns, coriander seed, orange peel, lemon peel, cacao nibs, and decaf coffee beans. Sweetened to 10% sugar with agave nectar. There’s a dryness to the finish, uncommon in a sweet vermouth. Holds up to rye. 96pts/Platinum Medal 2014 Beverage Testing Institute BroVo Rosé Vermouth “Pink” 39.8PF / 750ML Delicious rosé vermouth that starts with the Pinot Noir grape. Hearty and balanced with fall flavors, Pink is combined with orange peel, hibiscus, chamomile, sage, tarragon, pink peppercorn, grains of paradise, juniper berry, and rose geranium. It is sweetened with agave nectar to about 6% sugar. Sippable and mixes well. 93pts/Best Buy Beverage Testing Institute BroVo Floral Vermouth “Pretty” 39.8PF / 750ML Pinot Gris wine from the Wahluke Slope, with the addition of vanilla bean, cardamom, elderflower, chamomile, lemon peel, comfrey, and angelica. Sweetened to 6% sugar with agave nectar. Best in Category 2015 American Distilling Institute BroVo Dry Vermouth “Witty” 39.8PF / 750ML Witty is a non-traditional dry white vermouth with a delicate flavor profile that is lovely on its own or in a cocktail. A solid interpretation of a traditional European product featuring Washington wine from the Wahluke Slope. 90pts, Best Buy Wine Enthusiast BYRRH FRANCE This lost ingredient referenced in the Savoy Cocktail Book has beed recreated by famed bartender Lars Erik Lyndgaard Schmidt along side Byrrh Grand Quinquina Aperitif Wine 36PF / 375ML / 750ML Oh, and incidentally, it’s pro nounced like, well, “Beer.” Fortified wine, produced since 1873 in the small French town of Thuir. Byrrh is created by macerating South America Quinquina, coffee, bitter orange, colombo and cocoa in Muscat Mistelles, then matured in oak casks. The fruit forward wine lends natural sweetness, so no additional sugar is needed, and also provides Byrrh with its refreshing balance of fruit and spice. Byrrh is a bit softer than vermouth with heavy wine flavors and just a mild quinine flavor to add bitterness.
