ArteNOM, 1579 Tequila Blanco This highland blanco selection comes from Felipe Camarena, of the famed Camarena family. One of Mexico’s newest distilleries, El Pandillo uses modern innovations while embracing traditional ideals towards sustainability and energy efficiency. ArteNOM, 1549 Tequila Organico Blanco This valley-agave selection comes from El Arenal, where Ramón Sandoval carefully distills this delicious un-aged tequila from certified-organic agave. The valley growing conditions lend this spirit a distinctive herbaceous flavor with warm aromatics, and a fresh, vegetal From Arandas (elev. 5,400’), Feliciano Vivanco has been cultivating highland agave since Mexico’s tumultuous post-revolutionary period of 1919–1929. The family rekindled an old practice of yeast cultivation from the leaves of the pencas of the agave plant. ArteNOM, 1146 Tequila Añejo This añejo selection from Enrique Fonseca consists of two batches aged in different French bouquet with intriguing notes of cacao and subtle spice. Tequila Cimarron

Their highland 100% estate grown Blue Agave tequila is distilled to a drier profile for lighter cocktail sweetness, allowing for greater creative expression by mixologists and bartenders. Rich earth agave character and pronounced highland aromatics are balanced with a delicate smoothness and a bright, flavorful finish to create an ideal canvas for intricate contemporary cocktails. Cimarron, Blanco Tequila Medium body, crystal clear, vegetal and earthy, with subtle spice on the nose. Dry, bright agave characteristics on the palate. Cimarron, Reposado Tequila Medium bodied, aged in 20,000 liter American oak vats for 3-6 months. Don Amado Tequila

The renowned Arellanes family has been crafting one of the region’s most celebrated mezcals for eleven generations, since the late 1700s. The mash is double-distilled in small traditional ceramic clay pots and aged varieties are matured in American oak casks previously used for barreling Pedro Domecq brandy, a Mexican favorite.

Pino Bonito, Mexico (Siembra Spirits)
Siembra Spirits is pleased to be importing the first certified Mezcal Michoacáno into the U.S. by the Vieyra family of Pino Bonito, a heavily forested state. Fermentation occurs in large pine vats and can take between 5 and 15 days. They use one Pine still and one Oyamel still for distillation.

Siembra Metl, Cupreata The pungent, smoky-sweet smells of the agave hit the nose like herbaceous, wet earth. Then the palate warms with a silky texture; the flavors of roasting agaves and the resinous pine bark. Siembra Metl, Cenizo The sap from Pine and Oyamel are principal influences in the flavor profile of this Joven Mezcal. Cenizo has a spiced, floral bouquet. Strong nut varieties come through on the nose and palate; principally almonds. It coats the mouth with burst of fruits, like apples, and soft vanilla. Don Mateo de la Sierra, Alto The name of this semi-wild agave is actually Inaequidens, but locally they call it Alto – due to the fact that it only grows at very high elevations. The plant can take about 12-15 years to mature.

Don Mateo de la Sierra, Pechuga This recipe is extremely rare, being a Pechuga based on Cenizo instead of Espadin. The recipe actually comes from Don Emilio’s
wife, Dona Maria. She mixes a proprietary blend of fruits and spices, and the animals used are Turkey and Venison.

Excellia, Blanco The best example yet of a well-made blanco highland tequila that dares to use, expertly, the sort of delicate flavors usually only seen in an añejo or extra-añejo. Excellia, Reposado Nine months aging in grand cru Sauternes wine casks and Cognac barrels provide a round and extensive mouthfeel with rich honey, cigar-box, and caramelized-agave/ pumpkin notes mixed with subtle rancio and orchard fruits. Excellia, Añejo Aged eighteen months, it delivers dessert wine aromas (ripe and sweet grapes, dried apricots and pears) with evolving notes of rancio, baked spices and herbs, leather and sandalwood.

Vintage dated rare tequilas. These are the oldest bottlings of tequila commercially available in the history of the tequila business. Grown, distilled and bottled by Enrique Fonseca these are the most unique aged tequilas in the world. Each is distilled and aged differently using different types of woods and techniques. These are the first tequila products authorized by the CRT to carry both an agave harvest vintage date as well as a barrel aging statement. Offerings are rare and change often. Fuenteseca, Cosecha Blanco 2013 Made entirely from a single orchard of agave called “El Maguey” grown at 5,250’ elevation, Enrique Fonseca realized upon harvesting in 2013 that these agaves were too dynamic to mix with others for a larger production. Rested for three years before bottling. Fuenteseca, Tequila 2010 - 7 year Enrique Fonseca distilled this expression in early Spring of 2010, with three-quarters of the bottling made in a double-copper column still with removed plates to achieve a lower distillation proof, and the remaining quarter made in an alembic pot still. The run was then stored in American white oak previously used to age California red wine, and barreled in used dark French oak. The casks were then stored for 7 years at 3,800’ elevation in a cool-climate subterranean barrel room. Fuenteseca, Tequila 2008 - 8 year Made in late Spring of 2008, with three-quarters of the expression made in a double- copper column still with plates removed to achieve a lower distillation proof, and the remaining quarter made in an alembic pot still. One-quarter of the distillate was then laid in American white oak previously used to age California red wine, and three-quarters was aged in used dark French oak. The casks were stored for the full 8 years in a damp- climate cellar used in the early 1900s as a water cistern, to slowly settle the spirit in a colder environment with reduced wood interaction.

Fuenteseca, Tequila 2005 - 11 year Distilled in late winter of 2006 with two-thirds of the expression made in a double-copper column still with plates removed to achieve a lower distillation proof and the remaining third made in an alembic pot still. One-third of this lot was then laid into American white oak previously used to age California red wine, and the remaining two-thirds was barreled in used dark French oak.The casks were then rested for the full 11 years at 3,800’ elevation in a cool-climate subterranean barrel room, with the upper-most portion of the room opened to allow for soft air circulation in order to create a drier aging environment. Fuenteseca, Tequila 1998 - 15 year Nearly aged entirely in American white oak. A scant 3% of the lot was laid into French oak, to contribute a subtle dark oak tannin complexity. Three-quarters of the American white oak casks previously held bourbon whiskey and the remaining quarter were mostly California red wine casks and one Chardonnay cask. Fuenteseca, Tequila 1995 - 18 year This lot consisted of 75% tequila distilled in copper column stills and 25% tequila distilled in copper alembic stills. The entire run was laid into 180L Canadian white oak casks previously used to age Canadian rye whiskey, at a warehouse located at 4,600’. The casks remained there for six years. In 2001, the tequilas were extracted from their casks, blended together and re-barreled, with 47% returned to Canadian white oak casks and the remaining 53% going into 220L European dark oak barrels previously used to age California red wine. Fuenteseca, Tequila 1993 - 21 year Seeking to create the world’s longest-aged tequila, master distiller Enrique Fonseca distilled this lot in copper double-column stills in order to achieve a leaner structure without too many agave vegetable fats, which could breakdown over the foreseen ensuing decades. Laid into barrel in 1994.

Atotonilco, Mexico (Haas Brothers) This is the hallmark brand from Enrique Fonseca, Mexico’s largest highland agave cultivator, crafted from agave grown at his hometown 5,200’ elevation. The reposado and añejo varieties are aged exclusively in French oak for an added complexity that is rich, buttery and full of prominent highland agave character. Lapis, Tequila Blanco Full bodied, crystalline, transparent and luminous. Sweet flavors of moderate agave, citrus notes and even coffee. Brilliant when mixed with tropical fruit juices or light sodas. Lapis, Tequila Reposado Medium-light bodied. Crystalline amber. Sweet agave flavor, notably soft, fruit and flower notes, with sweet spices and sensations related to caramel and cocoa. Slightly aged in oak. Lapis, Tequila Añejo Deep amber with golden clarity. Smooth agave notes, pleasant nose-mouth balance, slightly wooded with smoked flavor. This is a rare añejo that can even be enjoyed on the rocks.

Mezcal Vago is family owned and operated and represents unique, unapologetic, traditional and transparent mezcals from single estates in Oaxaca. Vago honors the mezcalero by always having the distiller’s name on the bottle.

Aquilino Garcia Lopez Founder Judah Kuper’s father-in-law, Aquilino’s agave are of a distinct, almost brandy-like flavor.The fertile land around his Palenque in Yegolé produces a rich variety of agaves, allowing him to release Mexicano, Elote, Espadin, Cuixe and Tepeztates in limited batches. Joel Barriga The cousin of Aquilino, Joel’s Palenque sits in the Hacienda Tapanala where he produces Espadin. While higher in elevation, the soil and climate are nearly identical to Aquilino’s Palenque. Solomon “Tio Rey” Rodriguez Sola De Vega, a region famous for its use of olla de barro (clay pots) for distillation. The result is very different flavors based on various amounts of Espadin, Mexicano, Coyote, Arroqueño and Sierra Negra. Occasionally he produces Tobala en Barro and Espadin en

Barro in very limited batches. Emigdio Jarquin Don Emigdio distills outside of Miahuatlán de Porfirio Díaz, on a unique still called a Refrescador. He currently produces Madre Cuixe and Cuixe (he would call it Bicuixe) as well as limited batches of Tobala.

Mina Real is a step in a new direction for Oaxacan Mezcal. Made from agave that has been steam-roasted in low pressure brick kilns to highlight the plants bright highland flavor and floral bouquet instead of the layers of smoke traditionally found with wood roasted mezcal agave. This also allows them to be completely sustainable, without reliance on deforestation. Distilled in copper alembic stills. Mina Real, Mezcal Blanco - 92 Proof Agave is steamed in stone kilns to achieve more floral, aromatic characteristics. An exploration in the true flavor of Oaxacan Espadin with terroir as the defining character rather than over-bearing smoke. The truest expression of Espadin on the market. Mina Real, Mezcal Reposado - 84 Proof Reposado is barreled in used American white oak casks, presenting a touch of oak to add character and allow the agave characteristic to mingle with vanilla and subtle spice.

The tequila is both rich and balanced.

Purasangre, Tequila Blanco Fuerte Full bodied and rich, this Blanco is one of the truest forms of traditional Mexican Tequila flavor. Only the agaves of the highest sugar levels are used, creating a spicy, earthiness very representative of a mid-slope grown agave. Bottled at 87 proof. Purasangre, Tequila Reposado Barreled in French and American oak, never Bourbon casks. Master distiller Enrique Fonseca believes charred barrels are too harsh for delicate agave distillate. Only toasted barrels from wineries or other North American whiskies are used to retain the natural agave flavor. Brooklyn, New York Breuckelen Distilling began crafting gin and whiskey during the summer of 2010. They produce each of their spirits entirely from scratch in Brooklyn, New York. They mill, mash, ferment, distill, mature, fill, and label each and every bottle of spirits that bears their name. Made from organic grains from a farm in upstate New York. Breuckelen, New York Wheat Whiskey 100% New York Wheat, aged in new American oak. Distilled cleaner than more typical whiskeys. This method highlights the beauty of using wheat in a mash bill: a smoother, gentler base lets the intense oak-contributed flavors be the focus. Breuckelen, Local Rye & Corn Whiskey 90% rye and 10% corn, aged in new American oak. Distilled on a Coffey style pot still which produces a cleaner, softer spirit in a single pass. Rye is a brash spirit, with rich spicy notes. Their methods tone down rye’s intensity, but retain its characteristic style and full flavor. Breuckelen, Project No. 1: Straight Bourbon, Wheated Project No. 1 was fermented from a mash of 60% corn, 20% red wheat, and 20% malted barley. In the 1800s, Harry Johnson might have said “What do I like to drink for breakfast…ah, I’ve got it: Scotch and Absinthe!” Today, we would probably recommend this after dinner. The Morning Glory Fizz may sound like a rough drink, but with silky egg white and the freshness of citrus it’s as refreshing as its name. This cocktail varies greatly depending on the scotch you choose. Our version uses floral Tullibardine Sovereign as its base, with just enough malt to add nutty notes to complement the aromatic absinthe.

Morning Glory Fizz 2 oz Tullibardine Sovereign Single Malt Scotch
.75 oz Lemon juice .75 oz Simple syrup 1 Egg-white
*Golden Moon Redux Absinthe rinsed fizz glass/coupe.
Combine all ingredients but the absinthe in a shaker tin and dry shake them to combine ingredients. Add ice to the tins and shake again for 30 seconds. Rinse a fizz glass or a coupe with absinthe and discard the excess, then double strain the cocktail into the glass. Good morning!

A Spanish-style molasses-derived rum made at the Ingenio San Carlos distillery in Panama. Beginning with estate grown sugarcane from the famed Panameño growing region of La Provincia de Herrera, small batches of molasses are fermented using special proprietary yeast strains. The fragrant cane mash is then distilled in antique copper stills to concentrate flavors and remove impurities, before being rested in American oak casks to develop beautiful aromas, textures and flavors.
Panama Pacific, 9yr Rum - 94 proof Aromas of bitter vanilla and creamy, toasted muscovado sugar, big butter and wood, almost a creme brûlée, with juicy fruit and coconut banana cherry/almond subtleties.
The palate opens with a delicate sweet butter and caramel entry. Delicious dessert notes fade into wood in the finish. Panama Pacific, 23yr Rum - 84 proof Aromas of ripe butter, subtle flan caramel custard and white raisin above dried fruit and spices. The palate opens with sweet caramel that quickly gives way to charred wet wood, with white raisin close behind. Nice long buttery woody notes linger in the long finish.

A great spirit is a pure and undisturbed representation of raw material, capturing not just the flavor, but a sense of its place of origin. Paranubes Rum is made by wild fermenting the fresh pressed juice of sugarcane grown without pesticide or fertilizer in the rich soil of master distiller Jose Luis Carrera’s farm. Distilled to proof with no additives, this rum – or aguardiente de caña as it’s known regionally – is exactly what you would find lost in the cloud forest of the Sierra Mazateca mountains of Oaxaca, Mexico. Paranubes, Oaxacan Rum This fresh cane spirit is reminiscent of Agricole rums, but the process is entirely unique to the mountains of Oaxaca. Jose Luis Carrera is a third generation distiller that has been producing this rum for 35 years. He hand harvests 4 sugarcane varieties from his 14 hectare property. He runs a rolling fermentation over a 4 month period, emptying half of the ferment and re-filling it with fresh cane juice. Bottled without water added at 54% abv without additives, this is a spirit with a distinct sense of place.

Clear Creek Distillery was founded in 1985 with a vision to use the bountiful fruits of the Pacific Northwest to create fruit-based spirits that rivaled the best of their European counterparts. Using Old-World techniques and sourcing ingredients from the local orchards and fresh water springs of Mount Hood in the Oregon countryside, Clear Creek became one of the first craft distilleries in the United States. Clear Creek, American Pot Still Brandy Made in a style reminiscent of Armagnac, the American Pot Still Brandy is single-distilled from the wonderful wines of the Pacific Northwest. Age ranges from 2 to 9 years in French Limousin oak barrels, this brandy is much less austere than many of its French cousins, and has lively, fresh, fruity character.

Loves to be mixed with yogurt, coconut, mango, cucumber, lime, tonic, and shaken with anything creamy. Surprisingly versatile and an instant favorite of the local bar-stars.
