Ex-Bourbon Barrels

● All aging occurs in Ex-Bourbon Barrels. These barrels range from 1st fill Ex-Bourbon through 7th and 8th fill. ● 1st fill Ex-Bourbon Barrels will add more oak character to the Rum, whereas 7th and 8th fill barrels are far more neutral in impact and flavor - allowing the Rum to rest and continue its aging without imparting significantly high tannin or wood sugars. ● This allows the retention of bright Rum flavor without becoming overly oaked, while aging entirely in a tropical climate.
