Wild Fermentation

● All of the fermentation for Lágrimas del Valle occurs by wild or ambient yeast. Fermentation occurs in both Stainless Steel - Agua Miel / Liquid only - and in Wooden Fermentation tanks - Agua Miel & Bagasse (Liquid & Agave Fibers together). ● The Stainless Steel fermentation tanks are housed in an indoor facility but with open air exposure allowing for ambient yeast. ● The Wooden Fermentation tanks are housed outdoors with a simple overhang roof system - allowing for substantial exposure to ambient and local yeast strains.
