30% Tahona & 70% Rollermill
● The distillates that comprise each bottling of Lágrimas undergo two different crushing and fermentation methods - thereby allowing for integration of layers of flavor created by each process, while retaining the unique nuances from each particular rancho. ● 30% of the Agaves are crushed using a Tahona, or a giant stone wheel in a stone pit. The juices, and fibers are then transferred into wooden fermentation tanks to allow fermentation to occur. This allows for deep flavors to be imparted from the Agaves themselves. ● 70% of the Agaves are crushed using a rollermill, or a mechanized shredder, that helps to squeeze out the juice of the fibers, which then are transferred into stainless steel fermentation tanks. This allows for a pristine character of the rancho itself.
