By planting one tree per bottle sold, and through a partnership with Sustainable Harvest Intnl., Greenbar is helping to rebuild the rain forest of Central America. MONTGOMERY DISTILLERY USA, MONTANA Our farm has been in the family nigh on 90 years, sitting on one of the largest spring creeks in Montana, which irrigates our grains. Grandma Chris Montgomery grew up on this family ranch, now residing there with Grandma Tom Montgomery where they enjoy working hard and hosting friends and family. Our combination pot-column still was made for us by Germany’s oldest still maker, Christian Carl. Distillers Chad Larrabee and Christopher Conley have piloted the stillroom since 2012 and continue to create new and intriguing spirits that garner international recognition. Montgomery Distillery Whyte Laydie Gin 750ml / 80PF Working with Montana herbalists and wildcrafters; wild, native botanicals such as bee balm and elderflower are compounded with locally grown and imported ingredients, and Montana wheat in our harmonious dry gin.
POLI DISTILLERIE ITALY Gin Marconi is the result of a long tradition in distilling and of the innovative capacity of the Poli family, who has been distilling with an artisanal still since 1898 in Schiavon, near Bassano del Grappa, in the heart of Veneto. Poli Distillerie Marconi 42 Gin 750ml / 84PF Raw material: juniper berries, rosemary, mint, basil, thyme, cardamom and coriander. Production method: artisanally distilled with Crysopea, vacuum bain-marie pot still. RANSOM USA, OREGON, MCMINNVILLE We distill our spirits in a hand-hammered, direct-fired French alembic pot still, making selective cuts by taste and smell. This labor intensive, traditional method of distillation retains greater aromatic intensity and body from the raw materials we select with such great care. We mash and ferment our base wort on site weekly in small batches, sourcing local and organic grains where possible and incorporating barley grown on our own farm. Our gins include the finest natural botanicals, many of which are Organically grown in Oregon. Ransom Dry Gin 750ml / 80PF Fashioned after Holland’s malt wine Genever, with a decidedly more botanicals and iconic Oregon Marionberry and local hops. The result speaks meaningfully to its Dutch heritage as well as its Oregon provenance. Ransom Old Tom Gin 750ml / 88PF A historically accurate revival of the Gin in fashion during the mid-1800’s, in collaboration with David Wondrich. A base wort of malted barley, botanicals, and high-proof corn spirits, distilled in an Alembic pot still. The first domestic Old Tom Gin released since Prohibition, only the “heart of the hearts” is retained for this special bottling. 95pts Tasting Panel
Top 10 Gin Botanicals What these top 10 botanicals have in common is that they’ve all been used in gins for centuries, some even common in 17th and 18th century gins. #1 JUNIPER Juniper could be found at Paloelithic sites across Europe 10,000 years ago. People burnt juniper for its distinctive piney aroma. There are believed to be somewhere between 50–67 species of juniper in the world. According to E.U. law, gin must be predominantly flavored by Juniprus communis. U.S. laws don’t specify the species. As it only says “juniper berries,” Juniper is what gives gin its distinctive flavor. Without juniper… you don’t have gin. When you have juniper, technically, you have gin. #2 C ORIANDER Coriander are the seeds of the Cilantro plant. #3 ANGELICA (PRIMARILY ROOT) Angelica is the third ingredient in the “holy trinity” of gin, which includes coriander and juniper. #4 L EMON Did you know that the lemon is probably a hybrid of a bitter orange and the citron #5 ORANGE …the world of orange in gin is complicated.
#6 ORRIS ROOT The inclusion of dried Orris Root likely owes a debt to the world of perfumery. #7 C ARDAMOM This might be the biggest mover on the list in the past decade. #8 LICORICE (CHIEFLY ROOTS) Did you know that Licorice, owing to its strong flavor, and slight sweetness, is in Old Tom style gins. #9 C ASSIA Cassia is sometimes referred to as cinnamon, especially in the USA. #10 T RUE CINNAMON Cinnamon comes from the Cinnamomum verum tree.
