Hillrock is proud to be one of the few “field-to-glass” whiskey producers in the world and the first USA distillery since before Prohibition to floor malt and hand craft whiskey on site from estate grown grain. Hillrock Solera Bourbon 92.6PF / 750ML The World’s first Solera Bourbon. No barrel is ever fully emptied, and each barrel is occasionally partially emptied and then filled with new whiskey before being finished in 20 year old Oloroso Sherry Casks to balance flavors and add layers of complexity. The palate is rich and creamy, featuring notes of cinnamon, dark chocolate, and honey-roasted nuts, finishing with deep layers of buttered toffee and baking spice. Hillrock Double Cask Rye 90PF / 750ML This small-batch organic rye is double-barreled in air-seasoned, #4 char American oak. This specialized finishing process infuses the whiskey with deep vanilla and caramel notes, ensuring a smooth, sweet profile free of bitter tannins. High n’ Wicked Straight Rye Whiskey uses a five-year aged sour mash and a mash bill of 91% rye and 9% malted barley. The expression has been distilled by New Riff Distilling and bottled at 62% ABV. High N’ Wicked The Judge Tokaji Cask 104PF / 750 ML A 14-Year-Old Tennessee Straight Bourbon Whiskey finished for 6 months in Ex-Hungarian Tokaji Casks. Originally distilled in Tennessee with a mash bill of 84% Corn, 8% Rye, 8% Malted Barley - aged for 14 years in New #4 Char American White Oak, then finished for an additional 6 months in Ex-Hungarian Tokaji Cask. High N’ Wicked Foursquare 2007 Cask 100PF / 750ML A Single Grain Irish Whiskey, originally distilled in County Cork, Ireland - with a mash bill of 95% French Maize (Corn) and 5% Irish Malted Barley in a twin-column Coffey Still. Matured first in Ex-Bourbon Barrels and then finished for 6 months in casks that previously held the Award Winning “Mark X 2007” Barbados Rum from Foursquare Rum Distillery’s Exceptional Cask Selections Line. High N’ Wicked Rose Tattoo 119.8PF / 750ML A triple distilled Single Malt Irish Whiskey, double-cask matured in Ex-Bourbon and then finished in Ex-Amarone Wine Casks. released January 2025 High N’ Wicked The Jury 92PF / 750ML 84% Corn - 8% Rye - 8% Malted Barley. 15 Year Aged Straight Bourbon Whiskey Finished in Ex-Tinta Negra Madeira Casks, Black Cherries, Dark Chocolate, Pipe Tobacco, Maduro Cigar Wrapper, and leather. A subtle nutty note at the backend. Complex, Rich and Full. Figs, plums, and stone fruits followed by dark chocolate and red fruits. Finishes long and full on the palate.
