CHÂTEAU MUSAR LEBANON, BEKAA VALLEY Chateau Musar was the first producer in Lebanon to achieve organic certification for its vineyards in 2006. Most are located in the Bekaa Valley, cradled between two mountain ranges running parallel to Lebanon’s Mediterranean coastline. Château Musar L’Arack 106PF / 750ML From the storied Lebanese Château Musar, L’Arack de Musar is made from grape spiritsspirit with an average age of five years. It is unique in that it is distilled four times with the addition of anise seeds during the 4th distillation, followed by one year of aging in terracotta amphorae which contributes to its licorice aromas. The additional distillation results in a very pure, sophisticated, and easy to drink Arack. Currently produced by Yves Kübler, the fourth-generation master distiller – in accordance with original award-winning family recipes dating back to 1863 and 1875, and only utilizing the highest quality wormwood, sourced specifically from the unique terroir of the region. LEOPOLD BROS. USA, COLORADO, DENVER Leopold Bros. is an award-winning, small-batch distillery in Denver, where Todd and Scott Leopold are bringing old world methods to craft spirits. Leopold Bros. Absinthe Verte 130PF / 750ML Created following the traditions of 19th Century European master distillers, this is a clean, straightforward, and refreshing absinthe: pale straw yellow-green liquid with a wallop of licorice aroma and flavor and medium body. Adding ice water coaxes out more complex lime and cinnamon scents, as well as lemon, orange, and anise notes on the finish. “Excellent Absinthe” Wormwood Society Silver Medal International Wine & Spirits Competition MASSAYA LEBANON, BEKAA VALLEY While drawing on the experience of their French partners—Hebrard in Bordeaux and Brunier in Chateauneuf-du-Pape—they are at heart winemakers of Lebanon. Their ancestors and their land are their inspiration. Massaya Arak 100PF / 375ML / 750ML Exceptional! Indigenous Obeidi grapes are fermented for two weeks, then double distilled in traditional Moorish lid copper stills over vine wood embers. On the third distillation, it is macerated with organic green aniseed from the Syrian slopes of Mount Hermon, imparting distinctive aroma and flavor. It is then aged in traditional clay amphorae for two years, lending a subtle color and a notable maturity. Serve with two parts cold water.
The history of absinthe is a cocktail of myth, conjecture and controversy. A turn-of-the-twentieth-century favorite of artists and writers, the spirit was banned in the United States in 1912 because it was believed to be hallucinogenic. Just a few years ago, it once again became legal in America to buy the high-alcohol, anise-flavored liquor. The term “absinthe” comes from Artemisia absinthium, the scientific name for its key ingredient, wormwood. Long before distillers discovered it, the herb was used for medicinal purposes. The production of absinthe is much like that of gin: High proof neutral spirit is infused with a blend of botanicals, including wormwood, and redistilled. Traditionally, the alcohol is infused a second time before bottling to intensify the flavor and create the signature green color. Many modern producers skip this final step and use dyes instead. AGAVE MEZCAL
DON AMADO MEXICO, OAXACA Eleven generations of continual mezcal distillation with a legendary commitment to craftsmanship and experimentation have culminated in a spirit that is simultaneously complex and approachable. Don Amado is made from earthen-roasted maguey hearts which are, after crushing, fermented together with their piña fibers for a rich maguey character.The mash is then double distilled in small traditional ceramic clay pots. Don Amado Rústico 94PF / 750ML The flagship expression of the Real de Minas Distillery, Don Amado Rústico is made using the historic method of slowly roasting fully mature Espadín maguey hearts on firewood embers before natural fermentation with airborne yeast, followed by a slow double-distillation in ceramic pot stills. The minero clay-pot still is quite prevalent on the nose with aromatics leaning towards ash, crushed walnuts, roasted corn, and savory spices. A bright, citrus Espadín agave palate is well balanced against notes of caramel, butterscotch, and fresh herbs. Don Amado Añejo 87PF / 750ML A regal take on what many consider to be an essentially rustic distillate, Don Amado Añejo shows amazing complexity beyond simple smoke, and is a great example how barrel flavors can complement rather than mask agave’s wild charms. Don Amado Reposado 92PF / 750ML An homage to the popular history of Oaxacan clay-pot mezcal aged in brandy barrels, Don Amado Reposado uses exhausted brandy barrels from Pedro Domecq to create a nostalgic flavor of earthen-smoked maguey with the soft caramel and butterscotch notes of American white oak. *Aged varieties are matured in American oak casks previously used for barreling Pedro Domecq brandy. Don Amado Arroqueño 92PF / 750ML Rustic and refined, Don Amado Arroqueño is made from an enormous maguey species that requires 18 years to mature but is cultivatable, so ecologically sustainable while simultaneously wildly exotic and delicious. Bright floral aromatics of caramelized maguey, leather and soft smoke lend structure to ripe, cooked yam fruit flavors. Don Amado Pechuga 92PF / 750ML An autumn ‘harvest bounty’ mezcal, Don Amado Pechuga is a third distillation of our Don Amado Rústico, made with the addition of seasonal fruits, nuts and spices including apricots, wild criollo apples, hard, stubby bananas with clove, cinnamon, raisins, almonds, and walnuts. A treasure of complexity that exhibits rich, bright fruit notes, roasted nuts, dark baking spice, wafting hints of clean smoke, fresh cinnamon, and stone fruits.
MEZCAL DE LEYENDAS MEXICO, OAXACA Offering a collection of artisanal mezcales from different states from the Denomination of Origin of Mezcal. Mezcal de Leyendas Cuixe Oaxaca 2018 92PF / 750ML An ultra-premium and incredibly rare mezcal. Harvesting Cuixe agave is extremely difficult and takes 12-15 years to grow to maturity. Since it takes so long to ripen, and harvesting only happens for three months out of the year, production of this mezcal is all the more unique and limited. Mezcal de Leyendas Puebla 96PF / 750ML Sustainable harvested agave from northern valleys of Puebla. This agave potatorum, commonly known as Tobalá is called Cenizo in Puebla. This is the largest field of sustainably cultivated maguey tobalá in Mexico, thanks to the vision of the Alva family. Mezcal de Leyendas San Luis Potosi 84PF / 750ML In this rocky arid land, few agaves grow as well as the salmiana. Known as Verde, this wild agave from the San Luis Potosi central plateau has one of the most unique flavor profiles of any agave. TEQUILA: must be made in one of the 5 certified states in Mexico MEZCAL: can be made in one of 10 approved states in Mexico, but is most broadly produced in Oaxaca state. WHY ARE THEY DIFFERENT?: 1 . They’re made with different kinds of agave. Tequila must be made exclusively from Blue Weber Agave (Agave Tequilana). Mezcal can be made from more than 30 varieties of agave, the most common being tobalá, tobaziche, tepeztate, arroqueño and espadín, which is the most common agave and accounts for up to 90% of mezcal. 2 . They’re distilled differently. Both tequila and mezcal are made from the harvested core of the agave plant, otherwise known as the “piña.” However, that’s where the similarities in production end. Tequila is typically produced by steaming the agave inside industrial ovens before being distilled two or three times in copper pots. Mezcal, on the other hand, is cooked inside earthen pits that are lined with lava rocks and filled with wood and charcoal before being distilled in clay pots. While some large-scale mezcal producers have adopted modern methods, artisanal mezcal makers continue to use this more traditional method, which is the source of the smokiness commonly associated with mezcal. — Food & Wine Regions / Map Varietals Technically all tequila is a type of mezcal, but not all mezcal is a tequila...

MINA REAL MEXICO, OAXACA Mezcal Mina Real is an ecologically sustainable mezcal made with agave slowly cooked in a brick kiln without the consumption of firewood. Mina Real Mezcal Blanco 92PF / 750ML Modern and historical techniques are used, the agave honeys for Mina Real are fermented intact with their crushed agave piña fibers, followed by double distillation in copper alembic stills for earthiness and character. 92pts GOLD “EXCEPTIONAL” BTI ‘13 Mina Real Mezcal Reposado 84PF / 750ML Mina Real Mezcal Reposado is distilled from 100% agave Espadín. Real de Minas Distillery steam-roasts the agave, saving wood and keeping the piñas (hearts) un-charred. It’s twice distilled in ceramic pot stills and ages in used American white oak casks for an undisclosed time. PALOMO MEXICO, SANTIAGO MATATLAN, NOM-O20X The Palomo Mezcal brand is from Del Buen Agave, a collective of producers in the “Mezcal Capital of the World,” Santiago Matatlán, Oaxaca. They have been working together since 1930, and became an official Cooperative Society in 2006. Mezcal Palomo was launched in 2013 with plans for wider national and international distribution. Palomo Espadin Mezcal 92PF / 1.0L Palomo Espadin is made with agave Espadin that took 9 years to reach maturity. This agave is traditionally cooked in an underground pit oven, milled by horse-drawn tahona, and double distilled in a copper still. Aromas and flavors of smoked agave with touches of citrus on the palate.
PELOTÓN DE LA MUERTE MEXICO, OAXACA Produced by Master Mezcalero Cutberto Santiago in the village of Santiago Matatlán in Oaxaca
Pelotón La Muerte Espadin 94PF / 200ML / 750ML / 1.0L
Pelotón de la Muerte is made from 100% agave Espadín cooked in a pit oven covered with volcanic rocks. The juices from the cooked piñas are pressed using a traditional tahona, then fermented in wooden vats before being double distilled in copper pot stills. Pelotón de la Muerte means “brigade of death” and the label depicts the flag used by insurgents during the Mexican Revolution. Pelotón de la Muerte Criollo 90.2PF / 750ML Produced from wild agave native to the region of Guerrero, this is an intense mezcal with notes of light smoke. Pelotón de la Muerte Pechuga 100.4PF / 750ML Produced from a field blend of wild agaves from Guerrero, this vegan pechuga mezcal delivers smooth flavors ULTRAMUNDO MEXICO, DURANGO Ultramundo Mezcal is an agroforestry project. They’re attempting to foster a balanced relationship with nature through craft spirits, specifically artisanal mezcal, using the agaves from their 24,000-acre ranch in Mapimí, Durango. They leave at least 20% of the agaves that reach maturity to do what they do naturally: go to seed and regenerate their population. Ultramundo Mezcal Lamparillo 94PF / 750ML Ultramundo is produced using wild Lamparillo agave. Each plant reaches maturity between 15 to 20 years of age. Artisanal production, using the traditional techniques from the Durango region, producing an incredibly pleasing flavor profile. of cooked agave, mandarin, oranges, anise, and mint.
AGAVE RAICILLA
Nicknamed “Mexican moonshine” because of its underground production roots, raicilla is made in the state of Jalisco like tequila— but its piñas are roasted rather than steamed. It is made from various types of agave, which determines if it is “coastal (Agave angustifolia and rhodacantha)” or “mountain (Agave maximiliana and inaequidens)” raicilla. Floral, fruity, and fragrant, it’s typically served neat. What is Raicilla?

CAZCANES MEXICO, JALISCO Cazcanes Tequila is named after the Caxcan ― the last indigenous Mexicans to be conquered by the Spaniards. Their lineup of tequila is based on an old recipe found in a moonshine still in the jungle. It’s crafted with traditional methods, using artesian well water from deep underground and ripe blue Weber agaves that grow in volcanic soil. After the agave hearts are cooked and crushed, they are left to ferment naturally. Then, the juice is distilled using alembic stills. Cazcanes No. 10 Blanco Still Strength Organic 108PF / 750ML Cazcanes No. 10 Still Strength Blanco Tequila is a mouthwatering 108-proof spirit in its handmade glass bottle. Cazcanes No 7 Blanco Organic 80PF / 750ML No. 7 Blanco captures the pure essence of agave, offering a crisp and vibrant profile with pronounced notes of fresh citrus, sweet agave, and just a hint of black pepper. Cazcanes No. 7 Reposado Organic 80PF / 750ML

Aromas of fruit, baked fully ripened agave, green olive, and earth are invitingly present. Brighter and more rustic than the regular blanco, the accents of butter, olive, earth, black pepper, and vegetal qualities in the flavor are enhanced because it comes straight from the small copper pot still, without adding water prior to bottling. For years, the only way to sample this was to visit the distillery in Jalisco.

FUENTESECA MEXICO, JALISCO The Fuenteseca Reserva Extra Añejo Tequilas include the oldest bottled tequilas in the history of the tequila business. They exemplify barrel aging mastery by using assorted wood types, storage conditions, altitudes, and micro-climates to mature nuanced spirits. These historical selections are made available to us by Enrique Fonseca, who began storing these legendary distillates twenty-five years ago and now periodically releases them when determined to be optimal. The Fuenteseca Tequilas are also the first commercially available tequila products authorized by the CRT to carry both an agave harvest vintage date as well as a barrel aging statement. Fuenteseca Reserva Añejo 7yr 84PF / 750ML Enrique Fonseca distilled this expression in early Spring of 2010, with three-quarters of the bottling made in a double-copper column still with removed plates to achieve a lower distillation proof, and the remaining quarter made in an alembic pot still. Half of the run was then stored in American white oak previously used to age California red wine, and the remaining half barreled. Fuenteseca Reserva Añejo 8yr 86PF / 750ML Master Distiller Enrique Fonseca distilled this selection in late Spring of 2008, with three-quarters of the expression made in a double-copper column still with plates removed to achieve a lower distillation proof, and the remaining quarter made in an alembic pot still. Distilled in 2006, this 11-year expression blends column and alembic pot still spirits for a rich, low-proof profile. Aged at 3,800 feet in a climate-controlled subterranean cellar, it matured in a mix of California red wine and dark French
oak casks to create a complex, dry finish. Fuenteseca Reserva Añejo 15yr 86PF / 750ML
The highland agave used in this lot were harvested in Atotonilco in the Spring of 1998. The distillate was aged 15 years in a dry, earthen-floor aging room where a delightful faint sweetness was achieved by aging nearly all in American white oak, with only 3% laid into French Oak. 75% of the white oak casks previously held Bourbon and the remaining 25% were California red wine casks and one Chardonnay cask. Fuenteseca Reserva Añejo 18yr 87PF / 750ML Distilled in September 1995, this 18-year expression combines column and alembic copper stills. Initially aged at 4,600’ in Canadian Rye casks for six years, the blend was then split between Rye and California Red Wine European oak barrels. A final 12-year rest in a cool, breezy climate creates a deeply refined finish. Fuenteseca Reserva Añejo 21yr 87PF / 750ML This lot was distilled in copper double-column stills from mostly 1984 plantings harvested in late 1993 and laid into barrel in early 1994. The casks were stored 10 years in a dry, earthen-floor room in Atotonilco el Alto, before being moved to a higher, cooler climate on the slope above the highland town, where they remained for 11 more years. Nearly all of the barrels were previously used for aging California white wine, with one barrel having been used for aging Canadian rye whiskey.

What Exactly Are Bitters?
Bitters are alcoholic spirits that are infused with herbs, roots, fruit and leaves. They typically consist of water and alcohol,which has been steeped with a combination of botanicals. Made with high proof alcohol and strong flavors, bitters are highly concentrated; just a dash or two is necessary in a cocktail, and you’re never supposed to drink them alone. So what’s their point? Ira Koplowitz, co-founder of bitters company Bittercube, told Journal Sentinel. You add a drop or two to a cocktail to balance out flavors and add depth to a drink.
