30mL dry vermouth

Let’s face it, Melbourne is wet a lot of the time. So is this Martini. It’s also very aromatic and just delicious.

Stir over ice

TASTING NOTES The traditional underpinning of juniper and coriander is supported by native lemon myrtle which is a beautiful alternative to lemon peel. Local quandong and Australian macadamia nuts add softness and spice, while red and green Szechuan give a lovely warm mouthfeel. Fresh apples and grapefruit peel add lift and the resulting gin is bright and dry.
