Pepper whiskey, as-well-as hand-picking existing, mature barrels from select distilleries with similar grain bills and flavor profiles that match the “Old Style” of original James E. Pepper whiskey. Distilled and bottled at the historic James E. Pepper Distillery (DSP-KY-5) in Lexington, Kentucky. Aged a minimum of 4 years and bottled at 100 proof. The Decanter bottle is a recreation of a historic bottle produced at our distillery in 1945. HILLROCK ESTATE USA, NEW YORK Hillrock is proud to be one of the few “field-to-glass” whiskey producers in the world and the first USA distillery since before Prohibition to floor malt and hand craft whiskey on site from estate grown grain. Hillrock Double Cask Rye 90PF / 750ML Handcrafted from small batches of organically grown rye from the Hillrock Estate. The rye whiskey is matured in traditional oak casks before being double-barreled, or finished, in secondary casks. The secondary casks are composed of American oak and have been charred with a 4 char. In addition, the staves of the secondary casks were air-seasoned for over two years prior to the casks’ assembly. As a result, the secondary casks contribute strong notes of vanilla and caramelized wood sugars to the rye, while minimizing bitter tannins that are often present in kiln dried oak. Hillrock Single Malt Whiskey 96.4PF / 750ML One of the first New York single malt whiskies produced since Prohibition, this spirit is made with estate-grown and estate-malted barley, distilled in a copper pot and aged for around 2 years. Hillrock Solera Aged Bourbon 92.6PF / 750ML ‘Solera’ - a stack of barrels where a small portion of whiskey is removed periodically, and new whiskey is added. No barrel is ever fully emptied, and age and complexity gradually increase over time. Hillrock marries small barrel aged Hillrock Estate Bourbon with mature seed bourbon before finishing in 20-year-old Oloroso Sherry casks to balance the flavors and add layers of complexity… Current average age of the Hillrock Solera Bourbon is over seven years, and the rye content is approximately 37%.
