COCCHI ITALY, PIEDMONT Cocchi has produced wine-based aperitifs and vermouths since 1891. Since 1978, the company has been owned and operated by the Bava Family, themselves renowned producers of still and sparkling wine in Monferrato and Langhe. Because of this great winemaking history, all the Cocchi aperitifs and vermouths are made with indigenous Piedmontese varietals, like Moscato, Brachetto and Nebbiolo. Comoz came to fame as the essential vermouth in the El Presidente cocktail in Cuba. Fortified Wine has had dis tilled spirit added to increase ABV and preserve it. Port, Sherry, and Madeira are the most common examples. Aromatized wine is forti fied wine that has been infused with herbs and botanicals. Most aromatized wines have a prom inent bitter element to balance their natural sweetness. Wormwood is the backbone botani cal for vermouth. Even the name “vermouth” is de rived from the “wermut” infused German wines that came before it.

Cinchona bark is the source of qui nine, which most people are used to as a flavor com ponent in their

tonic water. Aromatized wines with quinine are commonly known as quinquina or chinato. Gentian root or flower is most commonly seen in Americano style aromatized wines. It’s also used commonly in many aperiti vo liqueurs.
