PALOMO SANTIAGO MATATLAN Del Buen Agave, a collective of producers in Santiago Matatlán, Oaxaca (the “Mezcal Capital of the World”), has been collaborating since 1930, officially becoming a Cooperative Society in 2006.They launched Mezcal Palomo in 2013. Palomo Espadin Mezcal 92PF / 375ML / 700ML / 1.0L Made with 12-year-old maguey Cirial, this mezcal is traditionally cooked in an underground pit oven, milled by horse-drawn tahona, and double distilled in a copper still. It boasts unique citrus aromas and flavors, with a subtle smokiness and a touch of agave sweetness. Palomo Te Conquista Cacao 92PF / 700ML This Joven Mezcal, made from five-day baked Espadín agave, is horse-milled and double-distilled for sweet, caramel, earthy, floral, and smoky notes. Nacional Mezcal 1938 92.4PF / 750ML Mezcal Nacional 1938 is an ensamble of wild Cirial and cultivated Espadín agaves. Its unique balance comes from the maestro mezcalero’s carefully guarded secret ratio of piñas, combined before cooking, crushing, fermenting, and distilling.
