● Sour mashing has become exceedingly popular in Whiskey production, as it allows for “acidification” of the mash - aiding in fermentation. ● A sweet mash requires impeccable cleanliness and attention to detail, as it has a very high risk of “going bad” - as such very few distillers utilize this process. However, when executed properly it produces an extremely complex, sweet, and creamy whiskey - especially working well with the very high-rye content of the mash bill.
