PALOMO MEXICO, SANTIAGO MATATLAN, NOM-O20X Del Buen Agave is a collective of producers in the “Mezcal Capital of the World,” Santiago Matatlán, Oaxaca. They have worked together since 1930 and became an official Cooperative Society in 2006. Mezcal Palomo was launched by them in 2013. Palomo Espadin Mezcal 92PF / 375ML / 700ML / 1.0L Made with 12-year-old maguey Cirial (agave Karwinskii), cooked traditionally in an underground pit oven, milled by horse-drawn tahona, and double distilled in a copper still. This mezcal has unique citrus aromas and is slightly smoked with a bit of agave sweetness. 2x Winner Mezcal of the Year Palomo Te Conquista Cacao 92PF / 700ML A rare, triple-distilled mezcal that marries the earthy smoke of Espadín with the soul of Oaxaca: chocolate. After a month long infusion with homemade cacao, a final distillation yields a perfectly clear spirit featuring elegant notes of caramel, earth, and toasted chocolate. 2x Winner Mezcal of the Year Palomo Te Conquista Coffee 92PF / 700ML Crafted from ripe regional Espadín agave, this mezcal follows centuries of tradition: pit-baked for five days, tahona-milled, and fermented with wild yeasts. After a double distillation, it undergoes a unique third distillation following a four-week maceration with roasted Oaxacan coffee beans, resulting in a complex spirit where smoke meets rich, earthy roast. Palomo Te Conquista Mole 92PF / 700ML Made from ripe regional agaves, baked underground in a conical stone oven for five days, and milled by horse drawn tahona. It is fermented with natural yeast in wooden tinas. Double distilled to obtain a Joven Mezcal with sweet, caramel, earthy, floral, and smokey flavors. A third distillation is done with all 30 ingredients of Carlos’ grandmother’s mole recipe, imparting notes of the chiles, peanuts, spices. ULTRAMUNDO MEXICO, DURANGO Ultramundo Mezcal is an agroforestry project. They’re attempting to foster a balanced relationship with nature through craft spirits, specifically artisanal mezcal, using the agaves from their 24,000-acre ranch in Mapimí, Durango. They leave at least 20% of the agaves that reach maturity to do what they do naturally: go to seed and regenerate their population. Ultramundo Mezcal Lamparillo 94PF / 750ML Ultramundo is produced using wild Lamparillo agave. Each plant reaches maturity btw 15 to 20 years of age. Fosforo Mezcal Tobala 90PF / 750ML This un-aged, crystal-clear Joven mezcal uses 100% Tobalá agave from Puebla. Roasted for 5–8 days and double distilled, the nose reveals pronounced aromas of ripe fruit, honey, and wet stone. The palate is lively with cooked agave and caramelized pineapple, ending with a subtle smoky-smooth finish. Fosforo Mezcal Tobala Ensamble Espadilla & Tobala 86PF / 750ML Our newest Ensamble blends Tobalá and Espadilla, a native Puebla cultivar that provides a fruit-forward backbone. After extended roasting (5–8 days) and double distillation, the nose reveals bright citrus and white flowers. The rich palate combines papaya, white pepper, and pear skin, ending with our signature, lingering Tobalá mouthfeel. Fosforo Mezcal Tobala Penca 86PF / 750ML This Tobalá Penca expression is roasted 5–8 days, fermented 10–14 days, and double distilled before aging 1–3 months in glass with an agave penca leaf. The brilliant amber spirit offers aromas of young leather and caramel. On the palate, it delivers an explosion of floral notes, toasted nuts, and a mellow smoky finish.
