SIEMBRA SPIRITS Siembra Spirits works with small family operations, showcasing different distilleries and terroirs. All 100% agave. Their portfolio features Siembra Valles (lowlands); Siembra Azul (highland); and Siembra Metl, the first certified Mezcal Michoacáno imported into the U.S. Siembra Alteño Blanco 96PF / 750ML A collaboration between Carlos Camarena and David Suro, Siembra Alteño uses agave from a single estate for consistent terroir expression. The agave is steamed for days in a traditional brick oven, mechanically milled for efficient sugar extraction, and spontaneously fermented in wooden vats with native yeast. Volans Extra Añejo Tequila 7YR 84.6PF / 700ML This limited edition Extra Añejo, handcrafted from mature Jalisco highland agaves, was aged in American white oak bourbon barrels and finished in French oak. Stabilized for six months, the final blend delivers robust complexity. With only 1,234 bottles produced, it’s a collector’s showcase. Volans Blanco Tequila 80PF / 750ML Volans Blanco tequila unaged and made from fully mature Blue Weber Agave & a mix of three sources of water – Rain, +450ft deep well, and spring water. It has been oxygenated or aerated. It is a truly enjoyable Blanco tequila to sip slowly. Volans Reposado Tequila 80PF / 750ML Volans Reposado Tequila is ‘rested’ in used American white oak bourbon barrels for under one year. This imparts complexity, aromas, & flavors. It is lighter in color and has a kiss of barrel notes. This allows the agave to shine through. Volans Still Strength Blanco Tequila 106PF / 750ML A powerful, undiluted expression of sweet agave. This Still Strength Blanco features a specialized water blend and fiber-fermented components to create a layered palate of lemon drops, almond paste, and white pepper. It is a bold, high-character tequila that balances fruity sweetness with a savory, saline finish.

Maestro Jorge Pérez and his son Miguel crafted this special Michoacán Espadin. They pit roast the 8-year-old agaves for 45 days, mash them by hand in eucalyptus canoes, and ferment them in brick basins using spring water and pulque (an agave) Siembra Valles Tequila Blanco 80PF / 750ML Coats your mouth with dry spices, dates, figs, the buttery aroma of orange Uses a slow distillation process that yields a tequila of higher alcohol content. Siembra Azul Tequila Blanco 80PF / 750ML Siembra Azul is made from the finest Blue Weber agave, from Arandas, Jalisco. EXTRA AÑEJO GINGER MARGARITA INGREDIENTS 2 oz Volans Extra Añejo Tequila 1 oz Cointreau 1/2 oz Lime Juice 1/2 oz + 1 tsp Ginger-Infused Simple Syrup Orange wedge (garnish) DIRECTIONS Add Volans Extra Añejo

Tequila, lime juice, Cointreau, Cranberry Juice to a shaker. Add ice. Shake well. Strain into a chilled coupe glass.
