CHIANTI CLASSICO
The History of Castellare Castellare di Castellina is a historic Chianti Classico estate at high elevation, where low-yield native vines like Sangioveto, a smaller clone of Sangiovese with a thicker skin, are meticulously cultivated without synthetic chemicals. The estate is a pioneer in sustainable viticulture, symbolized by rare birds featured on its labels. Its wines are shaped by limestone-rich soils, rigorous clonal research, and a philosophy that blends tradition with scientific precision. Owned by Paolo Panerai, Castellare produces structured, age-worthy wines that express the full depth of Castellina’s terroir.
General Manager and Winemaker As General Manager, Cellai is responsible for both winemaking (with the assistance of consulting enologist Maurizio Castelli) and sales management. He has extensive experience in viticulture and winemaking, with a particular focus on the Sangiovese grape. Alessandro Cellai
Chianti Classico Located in the Chianti Classico commune of Castellina, this Castellare offering is comprised primarily of the local Sangiovese grape, Sangioveto. Research begun in the late 1970s allowed Castellare to isolate this clone and enabled the winery to make this very unique style of a Tuscan classic. Varietal Composition: 95% Sangioveto, 5% Canaiolo Soil Composition: Calcareous Clay, Loam Average Vine Age: 25-30 Years Aging: 14 months in French oak Tasting Notes: A bright ruby red in color, this Chianti
Classico shows well-integrated aromas of tart red cherries, tobacco, sunbaked earth, and a hint of cedar spice. On the palate, firm structure and refreshing acidity make it a very versatile food wine.
