DIRECTIONS Muddle pineapple and half the rosemary in a bar glass with the orgeat. Add a couple of cubes of ice and the grappa. Slowly pour in the Prosecco while gently pulling the other ingredients up from the bottom of the glass with a bar spoon. Strain into a chilled Champagne flute or coupette.
