MEZONTE MEXICO, JALISCO, MICHOACAN Mezonte is a non-governmental organization (NGO) that promotes, supports and preserves the production and practices of traditional agave spirits. They feature agave spirits from all over Mexico, with an emphasis on Jalisco and Michoacán. Pedro Jimenez, the mind behind Mezonte, works in collaboration with Mexico’s producers to ensure fair wages and recognition. Mezonte Japo 94PF / 200ML / 750ML Mezonte Japo is produced by Hildegardo “Japo.” His mezcals (also called raicilla) are elaborated with endemic Agaves that grow between 12 – 25 years. Mezonte Jorge Perez 98PF / 750ML One of the most daring mezcal producers in México. Like an alchemist, Jorge experiments with every possibility all in the name of finding an interesting mezcal. Enthusiastic and humble, Jorge represents the spirit of a Michoacán producer. Agave Inaequidens from Rio de Parras, Querendaro, brick fermentation with pulque, distilled in Agave distilled from Lorenzo Virgen. Over 10 different agave varietals, produced in Chancuellar, Jalisco in an underground pit oven, fermented with spring water and distilled with pine wood with copper and Parota wood. Mezonte Santos Juarez 94PF / 200ML / 750ML Mezonte Santos is produced by Santos Juarez in Toliman, Jalisco. His mezcals are born and processed within the volcanic soil and fermented in stone, as was done over 500 years ago. Santos is produced using Alineno and Cimarron agave, distilled in copper and parota wood. Mezonte Tepe Aciano 99PF / 200ML Produced by a Aciano Mendoza from the Tepehuano community at the border of Jalisco, Nayarit and Durango who follows the tradition of developing this spirit primarily for ritual purposes. Cenizo agave, extracted by hand and distilled in clay pots. Mezonte “Teodoro,” Oaxaca 96PF / 750ML Miahuatlán is possibly one of the most important traditional regions of mezcal production in Oaxaca. Teodoro Garcia, originally from this Miahuatlán, has his own palenque to make mezcal. He is perhaps one of the few Oaxacan producers that still respect the original flavors of the plant. Made from Bicuixe & Espadín agave, extracted with tahona and distilled in a Copper Alambique. pine with copper and oyamel. Mezonte Lorenzo Virgen 94PF / 200ML / 750ML

PALOMO MEXICO, SANTIAGO MATATLAN, NOM-O20X Del Buen Agave is a collective of producers in the “Mezcal Capital of the World,” Santiago Matatlán, Oaxaca. They have worked together since 1930 and became an official Cooperative Society in 2006. Mezcal Palomo was launched by them in 2013. Palomo Espadin Mezcal 92PF / 375ML / 700ML / 1.0L Made with 12-year-old maguey Cirial (agave Karwinskii), cooked traditionally in an underground pit oven, milled by horse-drawn tahona, and double distilled in a copper still. This mezcal has unique citrus aromas and is slightly smoked with a bit of agave sweetness. Palomo Te Conquista Cacao 92PF / 700ML Made from ripe regional espadin agaves, baked underground in a conical stone oven for five days, then milled by horse-drawn tahona. The mosto is fermented with natural yeast in wooden tinas. Double distilled to obtain a Joven Mezcal with sweet, caramel, earthy, floral, and smokey flavors. A 4-week maceration is done with homemade Oaxacan chocolate. Followed by a 3rd distillation to produce a clear spirit with chocolate flavors. Palomo Te Conquista Coffee 92PF / 700ML Made from ripe regional, espadin, agave, baked underground in a conical stone oven for five days, then milled by horse-drawn tahona. The mosto is fermented with natural yeast in wooden tinas. The Mezcal is double distilled to obtain a Joven Mezcal with sweet, caramel, earthy, floral, and smokey flavors. A third distillation after a 4-week maceration with roasted Oaxacan coffee beans. Palomo Te Conquista Mole 92PF / 700ML Made from ripe regional agaves, baked underground in a conical stone oven for five days, and milled by horse-drawn tahona. It is fermented with natural yeast in wooden tinas. Double distilled to obtain a Joven Mezcal with sweet, caramel, earthy, floral, and smokey flavors. A third distillation is done with all 30 ingredients of Carlos’ grandmother’s mole recipe, imparting notes of the chiles, peanuts, spices. SIEMBRA METL MICHOACÁN Exploring ancestral agave distillates with the same commitment to quality and tradition. Siembra Metl is a liaison between passionate consumers and Mezcaleros who represent the ancient culture of mezcal in remote regions of Mexico. Siembra Metl Mezcal Don Mateo Cupreata 92PF / 750ML Agave Cupreata was nearly gone from Michoacán until the Vieyra family revived the subspecies. It can only reproduce sexually and is a pillar of agave biodiversity. The pungent, smoky-sweet smells of the agave hit the nose like herbaceous, wet earth. Then the palate warms with a silky texture, the flavors of roasting agaves and the resinous pine bark. Distillation in local pine wood rounds off the smokiness; a mezcal to be appreciated by aficionados and newcomers alike. Siembra Metl Don Mateo Cenizo 96PF / 750ML The sap from Pine and Oyamel are principal influences in the flavor profile of this Joven Mezcal. Cenizo has a spiced, floral bouquet. Strong nut varieties come through on the nose and palate; principally almonds. It coats the mouth with burst of fruit flavors.
