FOUR PILLARS AUSTRALIA, VICTORIA We established Four Pillars with a focus on gin. But great gin doesn’t just make itself. We recognized that our real focus would need to be on the craft of distilling. From small craft distillery to being named world’s leading gin producer two years in a row. This is a crazy ride we’re on! One day our distiller Cam thought, what would happen if you combined Four Pillars Gin with some of the best Shiraz grapes in Australia? Bloody Shiraz Gin, that’s what! Aromatically it shows fresh pine needles, citrus and spice, and distinct peppery, dense raspberry notes. The palate is lovely and sweet with a long juniper and spice character on the finish. Four Pillars Fresh Yuzu 83.6PF / 750ML We’ve had a thing for yuzu for a while now, and with three limited-edition trial runs under our belts, we’re ready to launch the newest member of our core range: a stand-alone, honed, and perfected Fresh Yuzu Gin. A bright, aromatic and (yes) fresh dry gin made with locally grown yuzu and inspired by our adventures making gin with Japanese friends. 83.6PF Four Pillars Navy Strength 117.6PF / 750ML We first released this luscious gin in 2014, after experimenting with some exclusive batches of a high-proof gin for the Gin Palace. We decided to add fresh ‘Judy’s Everbearing’ native finger limes in the botanical basket, with some fresh ginger instead of organic oranges, giving our Navy Strength Gin its signature power and intensity. The finger limes highlight the Asian coriander and star anise and are complemented by the fresh ginger. Then turmeric adds weight to the palate and a fresh, earthy quality, not unlike dill. The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls it all together. The palate is intense—sweet and juicy—but still very clean.
