Amaro di Bilaro
Sebastopol, California Bilaro is a dream, launched in July 2016, by husband and wife team Patrick Bickford and Susan LaRossa. This amaro is crafted in west Sonoma County and distilled at Spiritsmith in Sebastopol. Living so close to some of the best vineyards in California helped convince them to use premium grape spirit as their base, rather than the usual grain spirit base of most Amari. Bilaro, Amaro They macerate their spirit with 13 different herbs and botanicals in tank, and then let it gently rest in barrel for several months before bottling by hand. The resulting product has the lowest permissible amount of sugar added, 2.5 grams per liter. Amaro Bilaro is local, bitter and made in small batches.
