VERMOUTH / AROMATIC WINE
BONAL FRANCE Since 1865, this spicy, earthy aperitif has been known as “ouvre l’appétit”—the key to the appetite. Serious in its role as an aperitif, and then popular with sportsmen, Bonal became an early sponsor of the Tour de France. Bonal Gentiane Quina Aperitif Wine 32PF / 750ML Made in St. Laurent du Pont in the French alps, this fortified wine is infused with gentian, cinchona and herbs using a recipe created in 1865. Bittersweet with green grapes, prune, figs, plump sultana, liquorice and citrus with gentian and quinine bitterness. Neat, with a twist; or in place of sweet vermouth. 5+ Stars Difford’s Guide. BYRRH FRANCE Produced since 1873 in the small French town of Thuir. Evolved from quinine bark infusions used to prevent malaria in 1850. Byrrh Grand Quinquina Aperitif Wine 36PF / 750ML Fortified wine, produced since 1873 in the small French town of Thuir. Byrrh is created by macerating South America Quinquina, coffee, bitter orange, colombo and cocoa in Muscat Mistelles, then matured in oak casks. The fruit-forward wine lends natural sweetness, so no additional sugar is needed, and also provides Byrrh with its refreshing balance of fruit and spice. Byrrh is a bit softer than vermouth with heavy wine flavors and just a mild quinine flavor to add bitterness. 5+ Stars Difford’s Guide CAPERITIF SOUTH AFRICA For decades this unique Cape Aperitif inspired barmen all over the globe and it made its way into many famous cocktail recipes and books. But, around 1910, the company that made it disappeared, as did the recipe. Fast forward 100 years to when a Danish mixologist met a Swartland winemaker and the ghost ingredient became a possibility and then a reality. Caperitif Kaapse Dief Aperitif 33PF / 750ML Chenin Blanc fortified with spirit, gently sweetened by the sugar of the grapes, bittered by Quinchona bark and flavored with some 35 truly Cape ingredients such as fynbos, kalmoes and naartjies.
CAPPELLETTI ITALY, TRENTINO ALTO ADIGE First established in 1909. Cappelletti may be the oldest style of this classic red bitter still in production. Cappelletti Vino Aperitivo 34PF / 750ML An artisanal wine-based aperitif made in the Alto-Adige region of Italy. Mostly Trebbiano, the nose is round and full, captivating with just a hint of bitterness and herbs. Texture on the palate is generous, providing a slight bitterness from notes of citrus peel. CHAZALETTES & CO ITALY, TURIN The heir of the dynasty, Giovanni Chazalettes, armed with the old recipes book, a rich archive and his youth memories, begins a new chapter in their history. Characterized by the shared aim to save important heritage of Turin. It’s dedicated to the Queen Margherita of Savoy, who in 1907 granted Chazalettes to bear the Real House emblem. Chazalettes Vermouth Bianco della Regina 33PF / 750ML The Queen’s White Vermouth is a Vermouth of Turin with an intense fragrance of flowers and fruit in which, in addition to Piedmontese artemisia, there are notes of sweet citrus, coriander, angelica and a perfumed cardamom. Chazalettes Extra Dry Vermouth di Torino 36PF / 750ML Citrus peels freshness is beautifully balanced by Piedmont alpine herbs roundness with recalls of juniper and other spices. Chazalettes Vermouth Rosso della Regina 33PF / 750ML The Queen’s Red Vermouth vermouth has notes of marjoram, Piedmontese herbs, musk mallow and coriander.
COMOZ FRANCE The C. Comoz Vermouth Blanc dates back to the late 19th century when Claudius Comoz, son of house-founder Jean-Pierre Comoz, is credited with inventing the vermouth blanc style.The aromatized wine went on to enjoy great popularity, including being the essential vermouth in Cuba’s classic El Presidente cocktail. Comoz Vermouth Blanc 32PF / 750ML Comoz is less sweet than other
vermouth blanc, with notes of stone fruits, alpine flowers and a deep, resonant undercurrent of wormwood. This deeper profile marries with whiskey better than any other pale vermouth.
EL PRESIDENTE INGREDIENTS 1.5 oz Comoz Blanc
1.5 oz TenTo One rum 1 spoon orange curaçao 1 spoon grenadine DIRECTIONS Combine ingredients over cracked ice and stir well. Strain into chilled cocktail glass. Garnish with a twist of orange peel.
