LEOPOLD BROS. DENVER, COLORADO Leopold Bros. relocated operations from Michigan to their home state of Colorado to focus solely on distilling. They included systems to create a zero-waste facility by recycling water, composting, and other methods. Plus, space to accommodate all their fermenters and stills. The site is home to Colorado’s first distillery malting floor and kiln, as well as a dunnage-style barrel house, a tasting room, and education center. The Leopold Bros. SOUTHSIDE FIZZ INGREDIENTS 2 oz Rieger’s Midwestern Dry Gin ¾ oz simple syrup ¾ oz fresh lemon juice 2 oz mineral water 6-8 mints leaves Garnish with a sprig of mint DIRECTIONS In a cocktail shaker, muddle mint leaves with the simple syrup. Next, add the gin and lemon juice and shake gently—to keep from completely destroying the mint leaves. Double-strain into a highball glass filled with ice. Top with chilled club soda and garnish appropriately.
