METHOD 1. Stir gin and vermouth in a mixing glass over ice 2. Strain into a frozen cocktail glass 3. Twist lemon peel over to express the oils, then discard 4. Garnish with a few drops of olive oil 5. Serve with a side dish of Sicilian olives

Sipping on a gin balloon full of ice and deliciously garnished Gintonic, it’s easy to imagine you’re in Spain.

Fill a large wine glass with ice

TASTING NOTES We use three different types of olive oil plus olive leaf from the world-class groves of Victoria’s Cobram Estate. The aroma, flavour and texture of fresh olive oil is stunning. Macadamia contributes weight and length to the spirit, with rosemary and bay leaf adding savoury, fresh, herbaceous notes. Lemons add zest and lift the gin.
