50mL Rare Dry Gin 25mL fresh lemon juice

METHOD 1.

This classic cocktail dates back to the nineteenth century, using a sweeter Old Tom style of gin.

Shake the gin, lemon and sugar syrup over ice

Strain into a highball glass with ice

Top with soda water

Garnish with a wheel of lemon

TASTING NOTES Our use of whole, fresh oranges in distillation is unusual and gives this gin a great citrus punch. There is great spice thanks to our use of traditional and Australian botanicals. The cassia and star anise add rich fruitcake tones, the Tasmanian pepperberry leaf provides warmth rather than heat, and the lemon myrtle is a beautiful alternative to lemon peel.
