PAPALIN JAMAICA , JAMAICA What is the Papalin project? The idea is based on our desire to go back in the history of rum to the late 1800s, when Jamaican traders began to make blends, i.e., mixtures of rums from different distilleries. The basic idea is to blend rums made in a single island and entirely produced and aged at the respective distilleries. Our first release focuses on Jamaica and is called Papalin Jamaica. In the old days - that is, the days of Myers’s and John Wray Nephew - labels did not specify the distilleries of origin, in fact the composition of the blends was kept completely secret. Papalin Jamaica 7YR Rum 94PF / 750ML Papalin 7-Year-Old Jamaica Rum 47% is a blend of pot still rums from two of Jamaica’s renowned distilleries: Worthy Park and Hampden. The blend is made up of 80% Worthy Park, 10% Hampden HCLF aged in ex-bourbon casks, and 10% Hampden HCLF aged in ex-sherry casks. The rums aged completely in their respective distilleries before being blended together by Luca Gargano. 6000 bottles were produced1. Papalin 7-Year Old Jamaica Rum 2021 47% is rich and fruity on the nose with aromas of apple, lemon, tropical fruits, almonds and eucalyptus. The palate is full-bodied with vanilla, menthol, liquorice, pepper and oak, leading to a long and rich finish with lingering notes of coffee, lemon, walnuts, chocolate and vanilla. PROBITAS RUM BARBADOS A style of rum that would have made your daiquiri in the 1930s… Light white rums contributed to the explosion of popularity of cocktails like the Daiquiri in the post prohibition era. Unlike the white rums of today, which are often made from neutral or near neutral spirit, the white rums of the past had appreciable flavor. For the first time in history, coming from two of the most iconic distilleries in two of the most respected islands in the Caribbean for Rum making – Foursquare Rum Distillery in Barbados, and Hampden Estate in Jamaica. Probitas White Blended Rum 94PF / 750ML Probitas is distilled, matured, blended, and bottled in the Caribbean. No sugar, flavor, color, nor neutral/multi column spirit added. Bottled at a higher proof, 47% Alc/Vol, to showcase bold character, especially in cocktail.

PROVIDENCE CARIBBEAN, HAITI Opened in 2018, Distillerie de Port-au-Prince is the newest rum distillery in the Caribbean. A collaboration between the Barbancourt-Linge family (of the famed Barbancourt rum dynasty) and La Maison & Velier, the fruit of this partnership is Providence rum, rediscovering methods and techniques used by the Barbancourt Distillery from 1870 to 1946. Providence Dunder & Syrup 114PF / 750ML Based on traditional methods: it is produced from syrup and Crystalline cane juice. The sugar cane comes from Michel Sajous, in Saint-Michel de l’Attalaye. Fermentation is carried out using selected yeasts and dunder from previous distillations, allowing for the development of a particular aromatic complexity. The must obtained after fermentation is distilled in two stages in a copper still, heated in a water bath, designed by the boilermaker Müller.

THE MARY PICKFORD INGREDIENTS 2 oz Probitas White Blended Rum

2 oz fresh pineapple juice 2 bar spoon real grenadine 1 bar spoon maraschino liqueur DIRECTIONS

Combine all ingredients in a cocktail shaker and fill it ¾ with ice. Shake until chilled, then strain into a martini or coupe glass. Garnish with a cocktail cherry and pineapple fronds, if desired.
