Octagono Guanajuato Octagono husband/wife team Marcelo Castro Vera and Mukasha Dadajonova work with growers in Guanajuato who grow grapes naturally— no industrial fertilizers or pesticides, regenerative, biodynamic farming. There is no electricity or machinery, everything is done by hand from picking to crushing, pressing and even bottling. All fermentations are carried out in buried handmade Mexican clay amphoras. All wines are fermented on ambient yeast, receive no corrections, and are bottled unfined and unfiltered.
