Although renamed, the distillery continued to also bear the original name of the Henry Clay Distillery and produced Henry Clay Rye Whiskey. This 86-proof whiskey is over 90% rye in the mash bill, and has subtle notes of mint, clove, eucalyptus, and honey. Fun fact: The recipe for the Old Fashioned cocktail was said to have been invented by a bartender at the famed Pendennis Club in Louisville in honor of Colonel James E. Pepper, who then brought it to the Waldorf-Astoria Hotel bar in New York City.
A delicious whiskey, flavored with a wide range of apples which are almost overripe before juicing and blending with whiskey. The blend is then aged in bourbon barrels. A delicious mix of tangy fruit with hints of charred oak. Apple jam and vanilla. A little honey, toffee and mixed spice. Long, creamy, spicy finish.
