Hillrock Estate Double Cask Rye Whiskey is handcrafted from small batches of organically grown rye that are harvested from the Hillrock Estate. Once the rye has been harvested, it is mashed and fermented, before being distilled through a custom-made, 250-gallon copper-pot still. Following distillation, the rye whiskey is matured in traditional oak casks before being double-barreled, or finished, in secondary casks. The secondary casks are composed of American oak and have been charred with a #4 char. In addition, the staves of the secondary casks were air-seasoned for over two years prior to the casks’ assembly. As a result, the secondary casks contribute strong notes of vanilla and caramelized wood sugars to the rye, while minimizing bitter tannins that are often present in kiln dried oak. Hillrock Double Cask Rye Sauternes 1er Cru Cask Finish 90PF / 750ML Hillrock’s Double Cask Rye, finished in Premier Cru Sauterne cask barrels. Hillrock Double Cask Rye Port Fin Dram 114.7PF / 750ML After its first phase of aging in new charred oak, this whiskey was decanted into another new oak to enhance the sweet and spicy richness of the wood before finally being finished for 67 days in a Port Wine Cask. The whiskey is dense and concentrated as a result with impressive notes of treacle, dark chocolate, espresso, dates, and deep spices. Limited to 1002 bottles. ‘Solera’ - a stack of barrels where a small portion of whiskey is removed periodically, and new whiskey is added. No barrel is ever fully emptied, and age and complexity gradually increase over time. Hillrock marries small barrel aged Hillrock Estate Bourbon with mature seed bourbon before finishing in 20-year-old Oloroso Sherry casks to balance the favors and add layers of complexity… Current average age of the Hillrock Solera Bourbon is over 9 years, and the rye content is approximately 37%.
