SAINT JAMES MARTINIQUE Since 1765, Plantations SAINT JAMES have been producing rums of rare quality, and are among the founders of the prestigious world of the Martinique Appellation d’Origine Contrôlée. Our rum comes from the fermentation then distillation in a Creole column of pure sugar cane juice. This production method, recognized as AOC rum from Martinique, gives SAINT JAMES rums aromas of fruity bouquets, perfectly suited to aging in oak barrels. No added of sweeteners. The distillery produces a “High Easter” rum, very concentrated, in a small still especially provided for that purpose. The refining by our Cellar Master: the Sherry Oloroso cask harmonizes the notes of rancio with the notes of red and dried fruits. The rancio aromas slowly disappear to develop into red fruits and nice notes of nuts. This rum becomes silkier, with a nice roundness and some natural sweetness.
