S phera was founded in 2012 by Doron Rav Hon in Israel, in the Judean Hills. Doron Rav Hon studied wine making in Burgundy, trained at Domaine Jacques Prieur, and worked in Champagne. Inspired by his travels and experiences in Europe, he decided to specialize in white wines, particularly those made from the local grape varieties of Israel, such as Chardonnay, Sauvignon Blanc, and Semillon. The winery’s name, “Sphera,” is derived from the Greek word for “sphere,” representing the holistic approach they take in their winemaking process. Sphera embraces minimal intervention to allow wines to express their unique terroir. They are also known for their use of extended skin contact and fermentation in clay vessels known as am phorae, which contribute to the distinct character of their wines. Vineyards were planted along the wadis of Givat Yeshayahu. The climate is dry and the temperature amplitude is excellent.
