DON AMADO MEXICO, OAXACA Backed by eleven generations of craftsmanship and experimentation, Don Amado is a simultaneously complex and approachable spirit. Made from earthen-roasted maguey hearts, the mash is fermented with its fibers and double distilled in small, traditional ceramic clay pots. Don Amado Rústico 94PF / 750ML The flagship Don Amado Rústico is made using the historic method of roasting fully mature Espadín maguey hearts over embers, followed by double-distillation in ceramic pot stills. The clay-pot still imparts aromatics of ash, crushed walnuts, and roasted corn. The palate offers bright, citrus agave balanced against caramel, butterscotch, and fresh herbs. Don Amado Añejo* 87PF / 750ML A regal take on what many consider to be an essentially rustic distillate, Don Amado Añejo shows amazing complexity beyond simple smoke, and is a great example how barrel flavors can complement rather than An homage to Oaxacan traditions, Don Amado Reposado is aged in exhausted Pedro Domecq brandy barrels, imparting soft caramel and butterscotch notes. Earthen-smoked maguey is balanced with flavors of roasted corn, vanilla, tropical fruit, and dried chilies for a satisfying, slightly spicy finish. Don Amado Arroqueño 92PF / 750ML Rustic and refined, Don Amado Arroqueño is made from an enormous maguey species that requires 18 years to mature but is cultivatable, so ecologically sustainable while simultaneously wildly exotic and delicious. Don Amado Pechuga 92PF / 750ML
This autumn ‘harvest bounty’ mezcal is Don Amado Rústico refined by a third distillation with seasonal additions like apricots, wild apples, bananas, clove, cinnamon, raisins, almonds, and walnuts. It is a treasure of complexity, exhibiting rich, bright fruit notes, roasted nuts, dark baking spice, and wafting hints of clean smoke. Don Amado Tepeztate 92PF / 750ML The complex nose reveals candied lime, soft white flowers, bell pepper, and minerality, with hints of nuts and light pastry. The palate continues with grilled citrus, sunbaked flowers, bell peppers, and charred oak, balanced by a delicate, lingering savor of grilled fruit. Don Amado Largo 92PF / 750ML This mezcal is made from the elongated, tree-like Karwinskii maguey, which takes 10–14 years to mature and is cooked together with traditional round piñas. The flavor profile includes soft smoke and candied notes. A creamy mouthfeel carries rich, cooked maguey, fruit, and subtle spice, finishing bright and clean. Don Amado Tripon 92PF / 750ML There are alluring aromas of pastry being prepared: wild honey, green apple peel, tart cider, fragrant pear, and white grapes. The palate offers pure, bright sweetness, green herbs, and overripe nectarine, with a medium-length, smooth finish. *Aged varieties are matured in American oak casks previously used for barreling Pedro Domecq brandy.

Don Mateo de la Sierra Mezcal Pechuga 90PF / 750ML
This recipe is extremely rare, being a Pechuga based on Cupreata instead of Espadin. The recipe comes from Don Emilio’s wife, Dona Maria. She mixes a proprietary blend of fruits and spices, and the animals used are iguana, turkey and venison. Don Mateo de la Sierra Mezcal Silvestre 100PF / 750ML Silvestre is a unique expression based solely on the agave. Produced using only wild agave cupreata plants from El Limon, where they thrive with the help of cows and chickens, herbicide and pesticide free.

The name of this semi-wild agave is Inaequidens, but locally they call it Alto because it only grows at very high elevations. The plant can take about 12-15 years to mature.
