DON AMADO MEXICO, OAXACA Backed by eleven generations of craftsmanship and experimentation, Don Amado is a simultaneously complex and approachable spirit. Made from earthen-roasted maguey hearts, the mash is fermented with its fibers and double distilled in small, traditional ceramic clay pots. Don Amado Rústico 94PF / 750ML The flagship Don Amado Rústico is made using the historic method of roasting fully mature Espadín maguey hearts over embers, followed by double-distillation in ceramic pot stills. The clay-pot still imparts aromatics of ash, crushed walnuts, and roasted corn. The palate offers bright, citrus agave balanced against caramel, butterscotch, and fresh herbs. Don Amado Añejo* 87PF / 750ML A regal take on what many consider to be an essentially rustic distillate, Don Amado Añejo shows amazing complexity beyond simple smoke, and is a great example how barrel flavors can complement rather than An homage to Oaxacan traditions, Don Amado Reposado is aged in exhausted Pedro Domecq brandy barrels, imparting soft caramel and butterscotch notes. This autumn ‘harvest bounty’ mezcal is Don Amado Rústico refined by a third distillation with seasonal additions like apricots, wild apples, bananas, clove, cinnamon, raisins, almonds, and walnuts. It is a treasure of complexity, exhibiting rich, bright fruit notes, roasted nuts, dark baking spice, and wafting hints of clean smoke. Don Amado Tepeztate 92PF / 750ML The complex nose reveals candied lime, soft white flowers, bell pepper, and minerality, with hints of nuts and light pastry. The palate continues with grilled citrus, sunbaked flowers, bell peppers, and charred oak, balanced by a delicate, lingering savor of grilled fruit. Don Amado Largo 92PF / 750ML This mezcal is made from the elongated, tree-like Karwinskii maguey, which takes 10–14 years to mature and is cooked together with traditional round piñas. The flavor profile includes soft smoke and candied notes. A creamy mouthfeel carries rich, cooked maguey, fruit, and subtle spice, finishing bright and clean. Don Amado Tripon 92PF / 750ML There are alluring aromas of pastry being prepared: wild honey, green apple peel, tart cider, fragrant pear, and white grapes. Don Mateo Cupreata 92PF / 750ML Made from semi-wild Agave Cupreata — a key subspecies revived by the Vieyra family — this mezcal is a pillar of agave biodiversity. Harvested from Michoacán’s volcanic highlands, the spirit is roasted, naturally fermented, and double distilled in a local pine wood still,

Don Mateo de la Sierra Mezcal Pechuga 90PF / 750ML

This recipe is extremely rare, being a Pechuga based on Cupreata instead of Espadin. The recipe comes from Don Emilio’s wife, Dona Maria. She mixes a proprietary blend of fruits and spices, and the animals used are iguana, turkey and venison. Don Mateo de la Sierra Mezcal Silvestre 100PF / 750ML Silvestre is a unique expression based solely on the agave. Produced using only wild agave cupreata plants from El Limon, where they thrive with the help of cows and chickens, herbicide and pesticide free.

EL BUHO USA NY The El Buho mezcal brand, founded in 2010 by Brooklyn-based chef TJ Steele, has been exclusively produced by the Jimenez Mendez family, 5th-generation mezcaleros, in Santiago Matatlan, Oaxaca, Mexico. El Buho Mezcal Ensamble 100PF / 750ML This Ensamble is crafted from four agave plants: the Arroqueno, the Coyote, the Barril, and the Cuishe. The banana nose is balanced out by a dry, fatty mouth feel. El Buho Mezcal Espadin 92PF / 750ML / 1.0L 100% Espadin agave harvested at maturity from sustainable and bat-friendly fields. The hand-cut agaves are slowly roasted in a stone pit fire fueled by local oak. The mash is crushed by a horse-powered tahona stone mill and fermented for 3-5 days. After two distillations the mezcal is rested in stainless steel for six months. Tobala is a rarer, wild agave form with broader leaves, takes 15 to 20 years to mature generally, expertly blended with the sweeter Espadin. El Buho Mezcal Especial Cuishe 96PF / 750ML Cuishe agave matures for about 12 years, then the agaves are cooked for 4 days with the trunk of the plant, fermented for 6 days and twice distilled in copper stills. El Buho Mezcal Especial Mango Pechuga 96PF / 750ML Approximately 600kg of mango criollo were used to make this small batch of mezcal. El Buho Mezcal Pulquero 96PF / 750ML This agave matures at 15-20 years of age and is typically very large floppy leaves and grows to 2 meters high or more. We find this first release of Mexicano, from Agave Rhodacantha, to be a delicate, balanced mezcal that is best sipped. Although this agave carries many names throughout Oaxaca, the mezcales made from this species have a signature flavor across regions that often have beautiful vanilla, floral and chocolate notes with a thick texture. El Buho Mezcal Arroqueno 106PF / 750ML Made from the massive Arroqueño agave, which takes 15 to 20 years to mature (piñas can weigh up to 300kgs). This 106 proof

mezcal offers a smooth, bold roasted agave flavor and velvety texture, finishing with elegant heat and lasting light fruit notes. El Buho Mezcal Puro Capón 94PF / 750ML 100% estate-grown made exclusively from Espadín agave planted over 10 years ago by the Jimenez Mendez family in their field (Hornos), in Santiago Matatlán, Oaxaca. The resulting mezcal is a coveted family treasure called “PURO CAPÓN.”

This tepeztate comes from multiple batches of the rare agave, which grows wild off the mountainsides. The plant ages 25-30 years before harvesting and requires a 3rd distillation due to its low sugar content Bold and complex, the tepeztate’s heavier body relays its intense flavors. El Buho Mezcal Jabali 102PF/ 750ML The Jabali agave is notorious for being the most difficult agave to work with due to the foam it produces and the lower sugar content. This agave is named after the wild boar because of its spiky, curved leaf resemblance to the animal.

MEZONTE MEIXCO, JALISCO, MICHOACAN Mezonte is a non-governmental organization (NGO) that promotes, supports and preserves the production and practices of traditional agave spirits. They feature agave spirits from all over Mexico, with an emphasis on Jalisco and Michoacán. Pedro Jimenez, the mind behind Mezonte, works in collaboration with Mexico’s producers to ensure fair wages and recognition. Mezonte Japo 94PF / 750ML Mezonte Japo is produced by Hildegardo “Japo.” His mezcales (also called raicilla) are elaborated with endemic Agaves that grow between 12 – 25 years. Mezonte Santos Juarez 94PF / 750ML Mezonte Santos is produced by Santos Juarez in Toliman, Jalisco. His mezcales are born and processed within the volcanic soil and fermented in stone, as was done over 500 years ago. Santos is produced using Alineno and Cimarron agave, distilled in copper and parota wood. Mezonte Lorenzo 94PF / 750ML Agave distilled from Lorenzo Virgen. Over 10 different agave varietals, produced in Chancuellar, Jalisco in an underground pit oven, fermented with spring water and distille with pine wood with copper and Parota wood. Mezonte Tepe 94PF / 750ML Produced by Aciano Mendoza from the Tepehuano community at the border of Jalisco, Nayarit and Durango who follows the tradition of developing this spirit primarily for ritual purposes. Cenizo agave, extracted by hand and distilled in clay pots.

This Tobalá Penca expression is roasted 5–8 days, fermented 10–14 days, and double distilled before aging 1–3 months in glass with an agave penca leaf. The brilliant amber spirit offers aromas of young leather and caramel. On the palate, it delivers an explosion of floral notes, toasted nuts, and a mellow smoky finish.

MINA REAL MEXICO, SANTA CATARINA MINAS Mina Real Mezcal is made with agave slowly cooked in a brick kiln without the consumption of firewood. Our steaming method highlights the plants’ bright floral bouquet without burning an industry average of 3.5 lbs of firewood per liter produced. Mina Real Mezcal Blanco 92PF / 750ML Utilizing a combination of both modern and historical techniques, the agave honeys for Mina Real are fermented intact with their crushed agave pina fibers, followed by a double distillation in pot stills for a pronounced earthiness and character. Mina Real Mezcal Reposado 84PF / 750ML Mina Real Reposado Mezcal is additionally barreled in American white oak. PALOMO MEXICO, SANTIAGO MATATLAN, NOM-O20X Del Buen Agave is a collective of producers in the “Mezcal Capital of the World,” Santiago Matatlán, Oaxaca. They have worked together since 1930 and became an official Cooperative Society in 2006. Mezcal Palomo was launched by them in 2013. Palomo Espadin Mezcal 92PF / 375ML / 700ML / 1.0L Made with 12-year-old maguey Cirial (agave Karwinskii), cooked traditionally in an underground pit oven, milled by horse-drawn tahona, and double distilled in a copper still. This mezcal has unique citrus aromas and is slightly smoked with a bit of agave sweetness. 2x Winner Mezcal of the Year Palomo Te Conquista Cacao 92PF / 700ML Made from ripe regional espadin agaves, baked underground in a conical stone oven for five days, then milled by horse-drawn tahona. The mosto is fermented with natural yeast in wooden tinas. Double distilled to obtain a Joven Mezcal with sweet, caramel, earthy, floral, and smokey flavors. A 4-week maceration is done with homemade Oaxacan chocolate. A third distillation is done with all 30 ingredients of Carlos’ grandmother’s mole recipe, imparting notes of the chiles, peanuts, spices.

PELOTÓN DE LA MUERTE MEXICO, OAXACA Produced by Master Mezcalero Cutberto Santiago in the village of Santiago Matatlán in Oaxaca Pelotón La Muerte Espadin 94PF / 750ML / 1.0L Pelotón de la Muerte is made from 100% agave Espadín cooked in a pit oven covered with volcanic rocks. The juices from the cooked piñas are pressed using a traditional tahona, then fermented in wooden vats before being double distilled in copper pot stills. Pelotón de la Muerte means “brigade of death” and the label depicts the flag used by insurgents during the Mexican Revolution. Pelotón de la Muerte Criollo 90.2PF / 7540ML Produced from wild agave native to the region of Guerrero, this is an intense mezcal with notes of light smoke. Pelotón de la Muerte Pechuga 100.4PF / 750ML Produced from a field blend of wild agaves from Guerrero, this vegan pechuga mezcal delivers smooth flavors of cooked agave, mandarin, oranges, anise, and mint. .

ULTRAMUNDO MEXICO, DURANGO Ultramundo Mezcal is an agroforestry project. They’re attempting to foster a balanced relationship with nature through craft spirits, specifically artisanal mezcal, using the agaves from their 24,000-acre ranch in Mapimí, Durango. They leave at least 20% of the agaves that reach maturity to do what they do naturally: go to seed and regenerate their population. Ultramundo Mezcal Lamparillo 94PF / 750ML Ultramundo is produced using wild Lamparillo agave. Each plant reaches maturity btw 15 to 20 years of age. Artisanal production, using the traditional techniques from the Durango region, producing an incredibly pleasing flavor profile.

ArteNOM Seleccion de 1146 Tequila Añejo 82PF / 750ML

From agave grown at 4,620’ elevation, this Añejo was aged for nearly three years in Loire Valley French oak before finishing for a final fourth year in used Tennessee rye casks.

ArteNOM Seleccion de 1414 Tequila Reposado 82PF / 750ML One of the most terroir-driven flavors in the business, agave grown at 5,400’ elevation and fermented using field-derived yeast.

ArteNOM Seleccion de 1579 Tequila Blanco 81.4PF / 750ML

Using tequila’s highest-altitude agave from 6,079’, Felipe Camarena crafts this bright, aromatic tequila from stressed hillside agave, slowly roasted in brick ovens, macerated intact with fiber for a pronounced flavor, and distilled with rainwater.

CIMARRON MEXICO, JALISCO Cimarrón Tequila from Jalisco is distilled from hillside agave grown at 4,620’ elevation, where plant sugars reach an average of 24-26° Brix. A low-pressure, slow agave roast creates Cimarrón’s bright, forward flavor, and fermentation is entirely natural.

Cimarrón Blanco is a highland pure-agave tequila distilled for a dry profile to allow greater control of cocktail sweetness. This is 100% non-diffused, zero additive tequila made from all fully mature agave. Perfect for cocktails, but delicious on its own.

A low-pressure, slow agave roast creates Cimarrón Reposados’ bright, forward flavor, and fermentation is entirely natural using winemakers’ yeast. The reposado expression is aged in American white oak for 4 months.
