Lapostolle Grand Selection Merlot The grapes were carefully harvested and transported to the winery. We obtained clean and pure fruit with strict quality control thanks to the state of the art technology, our Vistalys optical berries selection. Then all the grapes were macerated up to 4 weeks to extract structure and color. During maceration, the fermentation lasted about 2 weeks in 100% stainless steel tanks, at 24 – 28°C. After maceration 55% of the wine was aged in French oak barrels for 5 months to give an extra layer of complexity while keeping the fruit expression. The remaining 45% was aged in stainless steel tanks; The result is great fruit with a fresh and pleasant palate. The wine was slightly filtered and clarified before the bottling. 2015 : 91 JS Lapostolle Grand Selection Sauvignon Blanc We want to enhance the best fruit that Rapel Valley offers its structure and natural acidity. Our key points are strict fruit selection with Vistalys, natural juice decantation and low temperature fermentation in stainless steel tanks. We added 8% of Semillón from our old vines in Apalta vineyard and 7% of Sauvignon Gris. 2016 : 90 JS Lapostolle Cuvée Alexandre Cabernet Sauvignon As a general winemaking philosophy, in our Cuvée Alexandre Cabernet Sauvignon we look for elegance, balance and ageing potential. To express the terroir of Apalta is our mission; so, our winemaking philosophy remains very natural a process with minimal intervention. Our key points are 100% hand harvest in small cases of 14 kilos, strict fruit selection by 85% optical state of the art grape selection, Vistalys and 15% hand de-stemming of the grapes. Gentle extraction methods and a judicious use of oak to preserve the fruit but integrate the complexity that a wine of this quality deserves. 2015 : 94 JS Lapostolle Cuvée Alexandre Carmenere To express the terroir of Apalta is our mission, so our winemaking philosophy remains a very natural process with minimal intervention. Our key points are 100% hand harvesting in small cases of 14 kilos and strict fruit selection by optical state of the art grape selection by Vistalys. A gentle extraction and a judicious use of oak to preserve the fruit but integrate the complexity that a wine of this quality deserves.
