François Montand, a descendent of winemakers from Champagne, moved to the Jura region in the 1940s and began making traditional method sparkling wines. He was instrumental in the creation of the Crémant du Jura AOC. Montand employs a rigorous selection of the best grapes to offer fresh and fruity, sparkling wine. Grapes are sourced from diverse terroirs throughout France. Select vineyards are located in the Gascony region and the soils are alluvial with clay and sand. Additional vineyard sites are located on the west facing slopes of the Jura Mountains, and the soils are mostly clay and limestone with some marl deposits. aromatic potential of the fruit. The first fermentation occurs at low temperatures

with selected yeasts. After blending and bottling, the liqueur de tirage is added and the secondary fermentation begins. Aged horizontally for at least nine months before being disgorged and prepared for shipment.
