Portland, Oregon (Imbue Cellars) Imbue is the first vermouth company in the Northwest. The unique aperitifs are designed to be enjoyed neat, but have proven themselves unique and inspiring ingredients in craft cocktails. Imbue is made with real ingredients. They don’t use adjuncts, or essential oils. They add freshly dried botanicals, some foraged for in the wild, and some farmed. They like their grandmother’s “from scratch” apple pie, and it is important to them that this vermouth has that same feel: made, not engineered. They are small batch producers of artisan vermouth. Imbue, Classic Dry Vermouth Produced from wine that is barrel aged for 2 to 4 years and infused with wormwood and other bewitching botanicals. Classic aromas of dried grass and wet earth are complemented by hints of vanilla, sage and baking spice. Notes of pear and caramelized nuts entice the palate which is finished off with soft hints of wormwood and sweet oregano. A twist of lemon accentuates both the aromas and flavors of this classic beauty. Imbue, Classic Sweet Vermouth Fortified Pinot Gris and Semillon are aged for anywhere from 2-4 years. Wormwood, bitter orange, cinnamon, ginger and anise are used among others. This sweet vermouth falls lower on the scale of sweetness for Rosso vermouths at 90g/L of sugar. Imbue, Petal & Thorn Aperitif A fortified Pinot Gris aperitif with striking feminine aromas of chamomile and orange- peel, with more orange, pine, and cinnamon on the palate. pleasing sweetness lend weight to the mouth feel, before ultimately giving way to the assertive Amaro- inspired, bitter finish.
