Don Amado Mezcal Arroqueño 92PF / 750ML / 375ml
DON AMADO MEXICO The renowned Arellanes family has been crafting one of the region’s most celebrated mezcals since the 1700s. 11 generations with a commitment to craftsmanship and experimentation have culminated in a spirit that is complex while approachable. Earthen-roasted agave hearts are fermented together with their piña fibers after crushing for a rich agave character. The mash is then double-distilled in small traditional ceramic clay pots. Aged varieties are matured in American oak casks previously used for barreling Pedro Domecq brandy. Don Amado Mezcal Añejo 80PF / 750ML / 375ml A regal take on what many consider a rustic product. Savory, mesquite aromas hint at a backyard BBQ and cayenne pepper. These flavors flow between layers of baked stonefruit from the brandy barrels. Don Mateo was Emilio’s grandfather. He migrated from Guanajuato to Michoacán in 1840, and began producing mezcal. Given that Don Emilio represents his family’s sixth generation of maestro vinatero, what better ambassador of the spirit of Michoacán. Coming from Michoacán gives their mezcals a very different character and taste from those made in Oaxaca or elsewhere in Mexico. Don Mateo de la Sierra Alto 92PF / 750ML The name of this semi-wild agave is actually Inaequidens, but locally they call it Alto – due to the fact that it only grows at very high elevations. The plant can take about 12-15 years to mature. Don Mateo de la Sierra Mezcal Cupreata 92PF / 750ML Don Mateo Cupreata is made with semi-wild agave Cupreata. Agave Cupreata was nearly gone from Michoacán until the Vieyra family revived the subspecies in their own backyard. It can only reproduce sexually and is a pillar of agave biodiversity. Once mature, the agave Cupreata are roasted in a pit oven, fermented using naturally occurring yeasts in oak wood tanks, and double distilled in a Filipino style still. The distillation in local pine wood rounds off the smokiness from the earthen pit; a mezcal to be appreciated by aficionados and newcomers alike.
Rustic, refined, revealing floral aromatics with caramelized agave, leather and soft smoke notes lending structure to cooked yam flavors. Mouthfeel delivers quince, persimmon, lemon verbena and kaffir, with layers of
chocolate, espresso and spice. Don Amado Mezcal Largo 92PF / 750ML / 375ml
Soft smoke with candied notes and a creamy mouthfeel layer fruit and a subtle spice on a palette of rich, cooked agave… reminiscent of the high desert just after a heavy rainfall, bright and clean. Don Amado Mezcal Tepeztate 92PF / 375ML On the nose, there is candied lime, soft white flowers, with more vegetal notes of bell pepper and cucumber skin along with hints of nuts, soft pastry, and a very lightly-charred wood, supported by a back note of minerality. The flavors continue in the same vein, tasting of grilled lemon & lime, sun-baked white flowers, bell peppers, persimmon, squash blossoms, charred oak, and minerals. These flavors are intricately balanced and deliciously perplexing, hinting at matcha tea and persist in a delicate fade that savors grilled fruit nuances. Don Amado Tobala & Bicuishe 92PF / 375ML On the nose, there are aromas of summer stonefruit, soft tea rose, and toasted red chiles peppers. The exotic tastes of Earl Grey tea, dried orange peel, candied mango, cinnamon, and faint woodiness lead to a smooth, jammy finish with a lingering hint of black licorice. Don Amado Tripon, Barril, & Bicuishe 92PF / 375ML There are alluring aromas of pastry being prepared: wild honey, green apple peel, tart cider, fragrant pear, and white grapes. Don Mateo Manso 96PF / 750ML
Don Mateo Manso mezcal from Sahuayo comes from Agave Americana var. subtilis, approximately 6 to 8 years old, and has organoleptic notes of almonds, pistachios and walnuts, as well as a light floral aroma. Ideal to drink alone, use in cocktails, or accompany
the traditional orange juice or red meats. Don Mateo de la Sierra Pechuga 90PF / 750ML
This recipe is extremely rare, being a Pechuga based on Cenizo instead of Espadin. The recipe comes from Don Emilio’s wife, Dona Maria. She mixes a proprietary blend of fruits and spices, and the animals used are iguana, turkey, and venison. Don Mateo de la Sierra Mezcal Silvestre 100PF/ 750ML Don Mateo Silvestre is a unique expression based solely on the agave. This mezcal is produced using only wild agave Cupreata plants on the mountainsides of El Limon, where they thrive with the help of cows and chickens, herbicide, and pesticide free.

FIDENCIO MEXICO, OAXACA Embodying the tradition and creativity of Oaxaca. With four generations of knowledge and the finest estate grown agave, Fidencio is a unique mezcal that is pure agave. Using 100% Espadín agave let to mature at least 10 years. Fidencio Joven Clasico Mezcal 88PF / 750ML Distilled twice in a traditional, wood fired, Alembic still, very similar to the stills used in Cognac. After the second distillation, we add a touch of water, and bottle. Fidencio Mezcal Joven Unico 88PF / 750ML Mexico- Made from 100% agave and double distilled. Earthy and slightly fruity on the palate, with mineral, smoke, and dried herbs, with a consistent fruit and agave undertone. Fidencio Mezcal Madrecuixe 91.8PF / 750ML Madrecuixe is a sub-varietal of Agave karwinskii. These agaves grow taller rather than rounder providing less sugars and have lower yields. They produce mezcals that are both rich and mineral forward. We use all wild agave responsibly sourced from the mountains surrounding Santiago Matatlán. Aroma – Sweet smoke, roasted agave, fresh rain. Taste – Brûléed sugar, fresh cut wood, wet stone. Texture – Fresh and bold with a velvet finish. Fidencio Mezcal Pechuga 90.8PF / 750ML Pechuga is a special expression that undergoes a third distillation using Fidencio Clásico. Crafted annually to celebrate the harvest, it features a unique blend of fresh fruits, including indigenous quince, pineapple, apples, bananas, and guava. During distillation, pechuga de pollo is suspended in the bell of the still creating a higher level of complexity delivering exceptional texture layered with the flavors from the fruit. Aroma – Banana, quince, roasted agave. Taste – Grilled pineapple, spicy fruit, roasted game. Tepextate is a large agave that can take up to 30 years to mature. Mezcals crafted from this agave variety are known for their bold character with herbal notes and robust spice. The amount of time spent in the ground produces a mezcal that is incredibly expressive of terroir. Aroma – Jalapeño, berries, spice. Taste – Cherry, blackberry, spice. Texture – Bold and spicy. Fidencio Mezcal Tobala 98.8PF / 750ML Tobalá, is a tiny agave that possesses a bold and vibrant character. With high levels of saponins and terpenes they produce very complex mezcals. This agave is harvested at 12 to 15 years and requires extra care as the raw agave can irritate even the most seasoned skin. Handcrafted by Enrique, these mezcals often exhibit intense aromatics with bright fruit and minerals. Aroma – Bright fruit, light smoke, minerals. Taste – Intense and complex, fruit, mineral. Texture – Bright acid, rich, long briny finish. Texture – Rich, long smooth finish. Fidencio Mezcal Tepextate 97.6PF / 750ML
MINA REAL MEXICO, OAXACA Mina Real Mezcal is an ecologically-sustainable mezcal made with agave slowly cooked in a brick kiln without the consumption of firewood. Their steaming method highlights the plants’ bright floral
bouquet without burning firewood. Mina Real Mezcal Blanco 92PF / 750ML
Utilizing a combination of both modern and historical technique, the agave honeys for Mina Real are fermented intact with their crushed agave piña fibers, followed by a double distillation in copper alembic stills for pronounced earthiness and character. Mina Real Mezcal Reposado 84PF / 750ML Mina Real Mezcal Reposado is distilled from 100% agave espadín. Real de Minas Distillery steam-roasts the agave, saving wood and keeping the piñas (hearts) un-charred. It’s twice distilled in ceramic pot stills and ages in used American white oak casks for an undisclosed time. LOS VECINOS DEL CAMPO OAXACA Los Vecinos Del Campo translates to “Neighbors of the Field” and in the tiny villages of Oaxaca, neighbors are family. After maturing for 7- 20 years, the agave is hand harvested. The hearts are slow roasted underground for 4-7 days developing a sultry, smoky-sweet flavor. After roasting, the piñas are crushed using a stone molino, then naturally fermented in a wooden vat for 7-15 days- depending on time of year. These artisanal mezcals are then double distilled in copper pot stills. The end products are sophisticated yet wild mezcals of the highest quality that taste of the generations of expertise behind them. In partnership with Carmen Villarreal and Casa San Matias, Los Vecinos promotes sustainability and supports the communities who create these mezcals. Los Vecinos del Campo Mezcal Ensamble No. 1 90PF / 750ML 5% Barril, 5% Madrecuishe, 90% Espadin, void of color and sediment free. Opening aromas of chamomile, dill, and roasted agave. Delicate but tangy fragrances of green tea, hemp, palm frond, green pea, and black pepper. Sweeter than the aroma implies, and first impression is of black pepper, honey, and soy sauce. MEZONTE MEXICO, JALISCO Mezonte is a non-governmental organization (NGO) that promotes, supports, and preserves the production and practices of traditional agave spirits. Pedro Jimenez, Curator of all thing’s agave, and the mind behind Mezonte, works in collaboration with producers across Mexico to ensure the producers receive fair wages and recognition for their products. Highlighted here are some of the mezcaleros that are part of this project. Mezonte “Candido Romero,” Jalisco 90PF / 200ML Loma de Guadalup, where Candido “Cande” Romero lives is known for the growing the Ixtero Amarillo maguey, representative of southern Jalisco. Cande is very careful in his way of working and with agaves “capones” that can reach up to 16 years. Always positive, Cande shares his lightheartedness through his mezcals. Mezonte “Lorenzo,” Jalisco 92PF / 750ML Don Lorenzo–Lorenzo Virgen—is part of at least 3 generations of mezcal legacy. On his lands, he has more than 10 varieties of Agave. On the horizon, you can see Colima’s Volcano, under which he teaches his grandchildren to make mezcal. This agave spirit is distilled by Don Lorenzo using all 10 agave varietals. Produced in Chancuellar, in an underground pit oven, fermented with spring water and distilled Santos Juarez and his family live and work in Toliman, Jalisco, possibly the birthplace of Mexican distillation. Santos’ mezcales are born and processed within the volcanic soil and fermented in stone the same way they did over 500 years ago. Santos is produced using Alineño and Cimarron agave (A. angustifolia haw and A. rhodacantha), extracted by hand using hatchets, fermented with spring water, and distilled in copper and parota wood. Mineral notes from fermentation in stone and a bright grapefruit peel profile. Subtle notes of pepper. Mezonte “Teodoro,” Oaxaca 96PF / 750ML with pine wood with copper and Parota wood. Mezonte “Santos Juarez,” Jalisco 94PF / 200ML / 750ML
PALOMO MEXICO, SANTIAGO MATATLAN, NOM-O20X Del Buen Agave is a collective of producers in the “Mezcal Capital of the World,” Santiago Matatlán, Oaxaca. They have worked together since 1930 and became an official Cooperative Society in 2006. Mezcal Palomo was launched by them in 2013. Palomo Espadin Mezcal 92PF / 1.0L Made with maguey Cirial (agave Karwinskii) that took 12 years to mature, that were traditionally cooked in an underground pit oven, milled by horse-drawn tahona, and double distilled in a copper still. This mezcal has unique citrus aromas and flavors that are slightly smoked with a bit of agave sweetness.

Muddle cherries into rocks glass. Add all other ingredients and do a light stir. Add ice and garnish with black cherry and lemon zest.
TILENO MEXICO , OAXACA Tileño mezcal is a tribute to the Zapotec people, artisans who are indigenous to this area of Oaxaca. Both the spirit and the packaging itself are crafted to reflect the heritage and the legacy of the Zapotec people, with a commitment to artisanal quality and authentic expression. Tileno Mezcal Espadin 84PF / 750 ML Distilled from cultivated agave, grown adjacent to and in the community around the Palenque. This is inspired from the mixture of indigo or indigo ground with the pomegranate peel gives a blue green hue that is found in the colors of the maguey espadín. Flavor Profile: delicate smoke, green apple, grass, pepper and baking spices. Tileno Mezcal Tobala 90PF / 750 ML Distilled from wild harvested agave, grown on public lands, throughout Oaxaca. This label is represented by a brown color with a range of pinks and purples as a result of the mixture of the powder of the copal shell, cochineal grana, edible lime and zinc, a mineral that with its properties represents the color of the earth where our raw material is obtained. Flavor Profile: light, sweet, floral with hearty
Miahuatlán is possibly one of the most important traditional regions of mezcal production in Oaxaca. Teodoro Garcia, originally from this Miahuatlán and a long legacy of mezcaleros, has his own palenque to make mezcal. He is perhaps one of the few Oaxacan producers that still respect the original flavors of the plant. Made from Bicuixe & Espadín agave, extracted with tahona and distilled in a Copper Alambique.

Fuenteseca Reserva Anejo 5 Yr 82.6PF / 750ML
62% of this expression’s tequila was column-distilled, then aged in European barrels of the variety Quercus robur (also known as Common Oak or Pedunculate Oak) that were previously used to age wine. 38% of the tequila in this lot was distilled in an Alembic pot still, then aged in French Oak barrels from central Europe. The barrel staves are of delicate wood, previously used to aged Royal Lochnagar Select Reserve Sherry. Each cask fill provides a wide range of different flavor possibilities — one of the reasons why age is not a sole determining factor in quality. Fuenteseca Reserva Añejo 7yr 84PF / 750ML Enrique Fonseca distilled this expression in early Spring of 2010, with three quarters of the bottling made in a double-copper column still with removed plates to achieve a lower distillation proof, and the remaining quarter made in an alembic pot still. Half of the run was then stored in American white oak previously used to age California red wine, and the remaining half barreled. Fuenteseca Reserva Anejo 9 Yr 84.6PF / 750ML 35% of this lot was column-distilled, then placed in American Oak barrels (Quercus rubra) native to central and eastern North America, a species that tends to be large (from 35 to 40 meters high) and that can become very long-lived. The wood comes from oak that grew in neutral, acidic, loose, deep, and well-draining soil. The barrels were given a medium toast, which is achieved with higher temperatures and for a longer period of time than is typical, to elicit aromas of chocolate, vanilla, and coffee while providing gold and amber color to the spirit. The other 65% of this lot is from an Alembic pot-still and is matured in American oak barrels of the variety Quercus alba commonly called White Oak, which is mainly found in Missouri and Kentucky. Staves were made by sawing the trunk, so the resulting wood is more resistant and less permeable to wine. The resulting stained barrels bring out espresso, vanilla, and cocoa flavors. Fuenteseca Reserva Añejo 11yr 83.4PF / 750ML Distilled in late winter of 2006 with two-thirds of the expression made in a double-copper column still with plates removed to achieve a lower distillation proof and the remaining third made in an alembic pot still. One third of this lot was then laid into in American white oak previously used to age California red wine, and the remaining two-thirds was barreled in used dark French Oak. The casks were then rested for the full 11 years at 3,800’ elevation in a cool-climate subterranean barrel room, with the upper-most portion of the room opened to allow for soft air circulation in order to create a drier aging environment. Fuenteseca Reserva Añejo 18yr 87PF / 750ML Produced in September 1995, 75% of this lot was distilled in copper double column stills and 25% distilled in copper alembic stills. Aging began in Canadian white oak casks previously used to age rye whiskey and stored at 4,600’ for six years. The tequilas were then blended and re-barreled, with half left to rest in Canadian white oak Rye casks and half moved to European dark oak barrels previously used to age California red wine. The refilled casks were then moved to a cooler, breezier climate, and left to age for an additional twelve years. Fuenteseca Reserva Añejo 21yr 87PF / 750ML This lot was distilled in copper double-column stills from mostly 1984 plantings harvested in late 1993 and laid into barrel in early 1994. The casks were stored 10 years in a dry, earthen-floor room in Atotonilco el Alto, before being moved to a higher, cooler climate on the slope above the highland town, where they remained for 11 more years. Nearly all of the barrels were previously used for aging California white wine, with one barrel having been used for aging Canadian rye whiskey.

The Fuenteseca Reserva Extra Añejo Tequilas include the oldest bottled tequilas in the history of the tequila business. They exemplify barrel aging mastery by using assorted wood types, storage conditions, altitudes and micro-climates to mature nuanced spirits. These historical selections are made available to us by Enrique Fonseca, who began storing these legendary distillates twenty-five years ago and now periodically releases them when determined to be optimal. The newest edition, Cosecha, is 3 year rested blanco. The Fuenteseca Tequilas are also the first commercially available tequila products authorized by the CRT to carry both an agave harvest vintage date as well as a barrel aging statement. Fuenteseca Cosecha Blanco 89.6PF / 750ML This 2018 Cosecha bottling is made from over-ripe Highland pinto Blue Weber agave grown at 5,019′ elevation in the rugged, extremely mineral laden caliche soil of Vista Hermosa, Micohoacán within the D.O. This area’s calcium-rich, chalky terroir is evident in Tequila Fuenteseca Cosecha 2018’s fantastically-heightened minerality that beautifully accents the pure agave flavors of sweet, cooked yams and warm baking spices.

SIETE LEGUAS JALISCO, NOM 1120 One of the oldest distilleries in Mexico, Casa Siete Leguas has more than fifty years of experience in the making of tequila by means of a traditional process delivering full-bodied, high quality spirits of refined flavor. Tequila Siete Leguas is steeped in heritage and tradition, Siete Leguas distillery was responsible for producing the “original” Patron Tequila brand, and brand rights were sold to St. Maarten Spirits in 1989. As the brand grew, Tequila Siete Leguas was no longer able to keep up with production, and Patron built a new distillery and moved all production in 2002. Siete Leguas tequila is distilled at two of the brand’s own distilleries, Fábricas El Centenario and La Vencedora. The former employs more traditional methods including the use of two mules to pull the tahona and wild yeast in fermentation while the latter uses a molina (a modern mill) to crush the agaves and their own yeast strain.
