WHISKY FRENCH

Fruity and exotic, Artesia 2018 is a blend of very lightly peated Pilsen malts. Aged in ex-bourbon casks, this whisky is highlighted by exotic fruits and also reveals a slight smoky note. Artesia is a particularly generous, malty and fruity whisky. An impeccable mastery of the brewing process and a long fermentation result in an elegant and exotic single malt. Its flavours are particularly well enhanced by the ageing in bourbon casks. The American oak adds notes of coconut and vanilla to a cocktail of exotic fruits (pineapple, kaki, yuzu). Version Francaise Ninkasi 2017 92PF / 700ML Building on the success of the Lyon breweries of the same name, Ninkasi launched whisky production in 2015 following its in Tarare in 2012 (on the site of a former dye factory). 2019 marked the launch of Track001, the dis tillery’s first whisky. Distilled in a Charentais still from unpeated pilsen and aged in a Cognac cask, Ninkasi 2017 is an intensely rich and fruity whisky with flavours of exotic fruits. PEARSE LYONS IRELAND, DUBLIN At one time, close to 40 distilleries were in operation in Dublin, nestled in a one-mile radius better known as the “Golden Triangle.” The four big distillery players at the time were George Roe and Company, John Power and Son, William Jameson and Company and John Jameson and Son. By the 19th century Irish Whiskey reached global appreciation as it was recognized as the premier whiskey due to its unique taste and smoothness. Today, the Golden Triangle in the heart of The Liberties is making a remarkable revival. Pearse Lyons Distillery is proud to be part of the rejuvenation of this historic area of Dublin city. VERSION FRANCAISE FRANCE, ARMAGNAC From La Maison & Velier, by selecting barrels from all over France that stood out from the crowd, the Version Française range was born. Since its launch, no fewer than 30 casks of French whisky have been bottled. The distilleries selected for the bottlings of Version Française are located all over France and produce unique whiskies with varied aromatic and taste profiles, ranging from fruity and delicate notes to peaty eaux-de-vie with strong personalities. Version Francaise Amorik 2014 100PF / 700ML The cask selected for Version Française is in keeping with the Celtic heritage of the Lannion distillery. It’s a second-fill oloroso sherry cask that has been used to house a distillate intensely smoked with 45 ppm Scottish peat. Version Francaise Artesia 2018 100PF / 700ML

WHISKEY IRISH

HIGH N WICKED IRELAND. COUNTY CORK High N’ Wicked, a small importer and specialty bottler that’s taken home a slew of accolades from the press, including a Top 50 of 2022 from Vinepair. This crew prides itself on distinguishing touches, and their latest – a limited release single grain whiskey selected by the venerated Noel Sweeney, a whiskey world legend, and finished in award-winning Foursquare Rum casks – is as richly detailed as a bespoke suit. And let me tell you: a helluva lot more delicious. High N’ Wicked Single Grain Irish Whiskey Foursquare ‘Mark X 2007’ Cask Finish 100PF / 750ML Matured first in Ex-Bourbon Barrels and then Finished for 6 months in Casks that previously held “Mark X 2007” Barbados Rum from Foursquare Rum Distillery in Barbados. Aromas of coconut, treacle, lemon peel, almond, nougat, fig, and vanilla - giving way to subtle tropical fruit notes of mango and candied pineapple. The palate, rich and sweet on the open, highlights baking spice notes of clove and cinnamon, immediately followed by rich caramel and candied hazelnuts. It lingers gently and finishes soft with a hint of custard. High N’ Wicked Saints and Scholars III Irish Whiskey 20YR 110PF / 750ML A Single Malt Irish Whiskey, distilled at the Cooley Distillery in County Louth, Ireland from a mash of 100% Malted Barley. Double Distilled in Copper Pot Stills by Master Distiller and Blender Noel Sweeney. Aged for 20 years in second fill Ex-Bourbon Barrels originally sourced from Heaven Hill. High N’ Wicked The Wild Rover Irish Single Malt 116.8PF / 750ML This whiskey comes out of County Carlow, Ireland and is produced from locally sourced malt at the Royal Oak Distillery. It is first filled in ex-bourbon barrels and then finished in 300L Pedro Ximénez sherry casks for 8 months. This is a one-time bottling of 1000 9L cases. Delightful and layered. Deceptively smooth. Dutch apple pie, and caramelized pears, brown butter, fig jam and brioche with honey. This is like multiple dessert courses in a glass. Finishes long but smooth with great nutty characters.

A blended 7-Year-Old Irish Whiskey of grain and malt whiskeys predominantly aged in Bourbon barrels with a small amount of Sherry barrel aged whiskey in the mix. This Irish Whiskey contains our own single malt.
