PAJAROTE MEXICO In 2015, La Princesa de Etzatlán and her brother Rubén Leyva undertook OMA Artisanal Delicacies, an artisanal beverages workshop. Here, they are patient and embrace the slow maceration processes for making liqueur, and the complexity of achieving the perfect blends of ingredients for the ponches. They reject stabilizers, dyes or artificial essences. Instead, they have learned that liqueurs naturally contain sediments, and this is not an imperfection, but a badge of honor. Pajarote Cordoval Dix Liqueur 60PF / 750ML DIX is the artistic pseudonym of Getrudis, Monica Leyva’s grandmother who inspired her since childhood to have a broader and riskier vision of life. A position she holds to this day. The spirit of grandma, Dix is present in this artisanal liquor made from the maceration of aromatic herbs and grapefruit peel, with highlights of laurel, clove and mint. Pajarote Ponche Chocolate 30PF / 750ML All natural from 100% cocoa. Pajarote Clove & Cardamom 44PF / 750ML Clove combined with cardamom that explodes with a fine aftertaste. Pajarote Ginger 44PF / 750ML This ginger liqueur took a full year’s worth of process to truly capture the spicy essence of its namesake root. The process begins with selection of the ginger root, macerated and then blended with piloncillo syrup. Pajarote Grapefruit & Rosemary 44PF / 750ML Fragrant zested grapefruit peels are macerated for several months and blended with fresh rosemary. Pajarote Ponche Guava 44PF / 750ML This guava ponche highlights the naturally refreshing properties of the guava fruit. Sweetened with unrefined Mexican piloncillo. Pajarote Ponche Tamarindo 30PF / 750ML Sweet yet equally sour Tamarindo (tamarind) is typically used in aguas frescas in Mexico.

Sheringham Rhubarb Liqueur 50PF / 750ML The Taste of Summer. With its classic gin base, premium rhubarb grown in British Columbia, and maceration process involving star anise and lemon skins, this liqueur achieves a perfect balance of tart, sweet, and subtly vegetal notes. SPIRIT WORKS DISTILLERY USA, CALIFORNIA Spirit Works makes everything in-house from milling, mashing, fermenting, distilling all the way through to bottling and shipping. While most Vodkas and Gins these days are made from redistilled Neutral Grain Spirit (NGS), Spirit Works mills and distills organic California-grown Hard Red Winter Wheat as the start to most of their spirits. Their Whiskeys are also aged in full size, 53-gallon new oak barrels for a minimum of two years. Their passion for locally grown grains and spirit-making without shortcuts shows in every drop of spirit they produce. Distillery of the Year American Distilling Institute 2020 Spirit Works Sloe Gin 54PF / 750ML The only Sloe Gin in America being produced via real Sloe berry maceration. Traditionally in the UK, sloe gin is served after a meal by itself as a digestif, but its unique color and flavor also combine wonderfully with a wide variety of spirits. Considered by most to be the best Sloe Gin on the market, it is delicious when mixed with everything from whiskey to agave spirits but is also wonderful with sparkling wine and makes an incredible Sloe Gin Fizz. Spirit Works Barrel Reserve Sloe Gin 60PF / 750ML A first and only of its kind - our full-bodied liqueur, rested in oak barrels, provides notes of dark cherry, clove, cardamom, and orange peel. This incredible aged sloe gin is most often enjoyed as a digestif on its own but is known to show up in specialty cocktails around the Bay Area.
