CLEAR CREEK DISTILLERY USA, OREGON Founded over 30 years ago by Steve McCarthy, inspired by the great fruit brandies of Alsace. Produced the same way to this day, from whole fruit distillation on a single pass through 60-gallon pot still. There is no purer expression of the remarkable fruits of the Hood River Valley. Clear (unaged) Fruit Brandies These fruit brandies are traditionally un-aged to maintain the wonderful intensity of the fruit. The heart of Clear Creek’s product line is our fruit brandies, which are all made according to old world techniques Platinum SIP Magazine’s Best of the Northwest ‘25 Clear Creek Pear Brandy 80PF / 60ML / 375ML / 700ML Considered one of the best eau de vies in the world. It takes 30 pounds of pears to make a bottle. No color, flavoring or sugar in this landmark pear brandy made in Oregon. Clear Creek Pear in Bottle 80PF / 750ML The pear actually grows inside of the bottle in their orchards and then filled with their pear eau de vie. This practice of growing pears in the bottle is traditional in Alsace where pear brandy has been made for hundreds of years. Pear-in the-bottle is highly labor intensive, requiring weeks of work putting the bottles on the trees in late May when the small pear will still fit in the neck of the bottle, tending them all summer, and picking them in late August. Clear Creek Blue Plum Brandy (Slivovitz) 80PF / 375ML / 700ML / 750ML Distilled much as it has been made in Europe for centuries, but the result is smoother, more aromatic, and more sophisticated than any European Blue Plum Brandy. Makes a great sorbet. Try it in an Old Fashioned! Kosher. Clear Creek Cherry Brandy (Kirsch) 80PF / 60ML / 375ML / 700ML Considered the top domestically produced cherry brandy. Fresh Oregon and Washington sweet cherries are crushed, fermented, and distilled into clear, powerful Kirschwasser (Cherry Schnapps) in the traditional German fashion. The flavor and great vanilla/almond “nose” come only from the This eau de vie is made from an infusion of the springtime buds of Douglas Fir picked by hand into clear brandy which is then re-distilled and re-infused with more buds. Finally, it is strained and bottled. The green color and complex fresh flavor are from the Douglas Fir buds. No artificial colors or flavors are added. Clear Creek Framboise Raspberry Eau de Vie 80PF / 375ML Very aromatic and very difficult to make. It takes up to 80 pounds of raspberries to make one small bottle of Framboise. Fermentation of fresh whole raspberries is very tricky and some years there’s lots of it and other years there isn’t any at all. Limited availability. cherries, as does the alcohol. Kosher. Barrel Aged Brandies Many of our fruit brandies do not benefit from barrel aging, so we leave them water clear and unchanged. Clear Creek Apple Brandy 2YO 80PF / 375ML / 700ML An eau de vie made from local Golden Delicious apples. Long fermentation time produces a complex cider which is distilled in an alembic brandy still and then aged in French oak for two years. This brandy shows a spicy character on the palate with lots of natural apple aromas. Great for Following the customs of the Calvados makers of Normandy, the high-proof apple spirit is aged in old Cognac barrels, made of Limousin oak, for at least eight years. The result is a beautiful amber brandy, with a remarkable amount of apple in the nose, but with the sophistication and complexity gained from all those years in oak. Clear Creek American Pot Still Brandy 85PF / 750ML Made in a style reminiscent of Armagnac, the American Pot Still Brandy is single-distilled from the wonderful wines of the Pacific Northwest. Age ranges from 2 to 9 years in French Limousin oak barrels, this brandy is much less austere than many of its French cousins, and has lively, fresh, fruity character. apple brandy cocktails like a Jack Rose. PEAR BRANDY SIDECAR INGREDIENTS: 1 ½ oz Clear Creek Pear Brandy ½ oz triple sec ½ oz fresh squeezed lemon juice DIRECTIONS: Shake brandy, lemon juice and simple with ice. Serve in a Collins glass and top with soda water.
