SIGLO CERO MEXICO, CHIAPAS Siglo Cero (meaning Zero Century, referring to the year 0, the height of Maya culture) is a clear, ceremonial spirit from Chiapas, Mexico A portion of each sale is donated to the ALSOL Foundation that supports Mexican artists and craftspeople in Chiapas This is truly a spirit of its own category. It tastes a little bit like rum, has body more like whiskey and has the earthiness found in some savory agave spirits. Subtle lime zest, hints of hay and soft Agricole funkiness. There is a soft sweetness on the finish that makes this easy to enjoy. The spirit itself is a blended distillate of corn (maize), sugar cane, and wheat. Made in rural communities hidden up in the mountains, Pox may seem like moonshine upon first glance. But look again: It’s also made from sugar cane and denotes flavors like coconut and cocoa. Sounds a lot like rum, right? Look one more time: It’s a Mexican spirit sipped straight between bites of orange—so, it’s like mezcal? Pox isn’t any of the above—it’s all of them rolled into one. SOTOMAYER MEXICO, CHIHUAHUA At Sotomayor, we are dedicated to extracting the liquid jewel of the desert: sotol. Between sand and a very extreme climate, the sotol plant gives us this distillate with a designation of origin. Sotomayor is specialized in its extraction and the production of 3 artisanal varieties, with genuine recipes and the heart of Mexico. Sotomayor Sotol Ensamble 96PF / 750ML Sotomayor Ensamble is made with Dasylirion Texanum, Leiophyllum, and Cedrosanum. This sotol is produced in the state of Chihuahua, Mexico. The Sotol plants were cooked in an underground oven for 5 days, before being fermented Sotomayor Leiophyllum 750ML - Sotomayor Leiophyllum is a Sotol made with Dasylirion Leiophyllum. This sotol is produced in the state of Chihuahua, Mexico. The Sotol plants were cooked in an underground oven for five days before being fermented in wooden casks and double distilled. Leiophyllum, commonly known as green sotol, is part of the asparagus vegetable family. Sotomayor Sotol Texanum 96PF / 750ML This crystal clear sotol is Sotomayor’s masterpiece. It consists of 100% of the rare Dasylirion species Texanum, is distilled three times and is probably the most complex sotol currently on the market. Sotol heads are baked in a conical stone oven, using mesquite wood and volcanic stone. Firing is carried out for 4 days; a volume of 3 tons of pineapples of 40kg on average each. This beverage was conceived from the cosmo vision of the Mayan folk delivered by the will of the gods. Considered by the Tzotzil and Tzeltal cultures as a ritualistic element with healing properties, it is also the medium through which they encounter with their ancestors or communicate with the gods. Don Dante Pox 92PF / 750ML Pox Don Dante is born from the desire that us, as Mexican businessmen have of rescuing from oblivion one of the most important ancestral beverages of our country, as well as supporting the families of the several producers involved in its elaboration. This way, we hope to collaborate to maintain alive one of our most rooted heritages in the Altos de Chiapas Mayan communities. LA ESCONDIDA MEXICO, OAXACA, CHIHUAHUA Sotol, a spirit derived from the desert spoon plant native to northern Mexico, offers a unique twist on the traditional tequila experience. La Escondida Sotol Blanco 80PF / 700ML La Escondida Sotol is a true gem among agave-based spirits. RAICILLA DE UNA MEXICO, JALISCO Raicilla De Una is made with Agave maximiliana in the highlands of the Sierra Madre Occidental mountains of Jalisco, Mexico. The agaves are harvested after 8 years and roasted in an adobe and stone oven. De Una is double distilled. Raicilla De Una Maximiliana 86PF / 750ML The warm, spicy notes of black and green peppercorn mixed with raw cacao give way to sweet, roasted pineapple and caramelized tropical fruit. Raicilla De Una is raw and complex blend of what one expects from the Mountains of Mexico. On the nose, grapefruit pith mingles with fresh herbs and wild underbrush making it hard to ignore the dusty earth tones of this traditional agave spirit.
