CASA MEXA MEXICO, JALISCO Mexa Ancestral Blanco Tequila is a collaborative project with Marco Jauregui, a fourth-generation tequila producer whose ancestors started farming agaves in the lowlands of Jalisco in the early 1900s. Mexa Tequila is known for its dedication to quality and traditional production methods, including the use of a tahona, a large volcanic stone wheel used to crush cooked agave, in the production process. Tequila Mexa Ancestral 104PF / 750ML Ancestral is the only tequila in several hundred years to be hand macerated. Tequileros bash the roasted agave with large wooden mallets for hours at a time until the sweet juices are extracted. Oak mallets impart a unique woody flavor, and no agave flavor is lost to machinery. Tequila Mexa Tahona 96PF / 750ML This Blanco Tequila is the result of careful selection of the finest blue agave
plants, which are harvested at peak maturity and cooked in traditional brick ovens before being crushed by the tahona wheel. The use of the Tahona method is a rare and traditional practice that results in tequila with a unique flavor profile that sets it apart from less traditional tequilas. The resulting juice is then fermented using natural yeast and distilled in copper pot stills to preserve the natural flavors and aromas of the agave.
