THIS CATEGORY IS SHOWING DOUBLE- DIGIT GROWTH, AND THE BIG PLAYERS ARE DIVING IN The category loosely defined as “wellness” or “better for you” wines has taken off over the past half-decade, drawing a variety of players all eager to tap into the desire for healthier lifestyle choices. Twelve leading brands combined for 14% increase in 2023, reaching 2.07 million cases according to Impact Databank. Volume of those leading 12 brands has more than quadrupled since 2020. Scheid Family Wines was one of the early players in the field, launching Sunny With a Chance of Flowers ($12-$20 a 750ml) in 2020. Executive vice president Heidi Scheid says the combination of health and wellness became a focal point for many consumers in all product categories, and the early success of White Claw, with it prominent calorie statement on the front of the package, led her to channel efforts in that direction on the wine side. Sunny With a Chance of Flowers gained considerable traction right away and was quickly met with competition. “We were one of the first ones out of the gate and now it feels like every week there’s
something new,” says Scheid “It just points to the strength of the category. It’s not all about being better for you. It’s really about your mental state. MAKING LOW AND NON-ALCOHOL WINE
Spinning cone columns This method involves repeated evaporation and condensation at low temperatures, using inverted cones and centrifugal forces.The constituent elements are separated and then blended back together. Heating The wine is heated to 78.3°C, the point at which ethanol boils, so that the alcohol evaporates. Some winemakers are uncomfortable with this method because more delicate aromas and flavors are affected/destroyed when the alcohol is boiled off affect the wine’s aromas. Vacuum distillation The wine is heated in a vacuum, which lowers the boiling point of the alcohol and allows it to evaporate destroying key aromatic compounds. This method preserves the wine’s flavors and aromas in direct correlation to the increase in vacuum pressure. This method can preserve the wine’s flavors and aromas. Reverse osmosis The wine is forced through a fine membrane that only allows alcohol and water to pass through. This process is repeated until the wine becomes a concentrate and water is added back to return the volume.
