Cuvée des Moines or Blend of theMonks, was named i n honor of the earl y Benedictine monks whowere i nstrumental in developing the Champagne method. The crémant winemaking technique employs a reduced dosage, which l owers the bottle pressure about one a tmosphere, so that the Champagne is soft, creamy and packed with ti ny bubbles. The Bl eau Brut and Rose cuvee i s the fruit of a unique and very specific method of champagne making that has been perpetuated by Besserat de Bellefon s ince 1930. This consists of adding less “l iqueur de tirage” (a mi x of sugar, yeast andmust) at the moment of bottling which crea tes a lighter, more diaphanous formation of effervescence. The mous se is smooth, creamy and persistent. A distinctive feature of our Bl eu Brut is the absence of malolactic fermentation.
