Domaine De Courteillac (doh-mehn duh cor-tee-yak)

Location: Entre-Deux-Mers Established: Late 19 th / early 20 th Century Principals: DahoeWines &Spirits under the consultation of DominiqueMeneret (former owner), StéphaneDubesse (winemaker), StephaneDerenencourt (consultingwinemaker) Hectares: 50 KEY POINTS: 1. Courteillac is in the commune of Ruch, just south of Castillon-la- Bataille. The soil here is a natural extension of the Saint-Émilion plateau: limestone and clay over a pure limestone subsoil. 2. The domaine enjoys one of the highest elevations in the Entre- Deux-Mers region which helps moderate alcohol and retain freshness. This is especially important with Merlot-based reds blends during warm vintages. 2. The vines, which are double-Guyot trained, are tended with exacting care. From pruning to harvesting, each vine is visited more than 15 times per year. Once harvested, the grapes are sorted and gravity-fed into individual vats to allow for individualized attention to different parcels, fermented, and aged 16-18 months in 25% new oak barrels.
